Summer Squash Chicken Alfredo

Delicious. Just used a cup of Classico Alfredo sauce and added the other ingredients to it. I used roasted red bell peppers instead of tomatoes and left out the almonds. The squash overcooks easily, so just saute for a few minutes on high. I also used a 1/2 lb of chicken instead, and included the garlic in the sauce.

Great Grandma Johns' Pasties

Just used Pillsbury buttermilk biscuits and turned out great. For filling, I chopped all the veggies quite small, pre-boiled the potatoes and carrots, and added onions and ground beef (pre-cooked the meat as well). Used salt, pepper, garlic powder, and parsley. Was good but pretty mild. Maybe try more spices or a little gravy or something to make it more moist. Quite good though.

Thai Green Curry Chicken

Really delicious but try without soy sauce. Perfect heat spiciness. Used Thai Kitchen brand of green curry. Did 1 and 1/2 TBSPs of curry. Left out fish oil and it was still really good.

Chicken Pesto Paninis

Delicious! Used Classico pesto, sharp white cheddar (although most white cheeses would work). Also, used Tuscany Boulga bread from Smiths, and it tasted better than Zupa's. I pre-cooked the chicken (diced very small), peppers and onions, then added it to the pesto and put it on the sandwich for grilling.

Stracciatella II

I cooked everything in a crockpot (including raw chicken). Added extra fresh spinach and parm. cheese, and doubled the Oregano. Also left out egg, and it tasted good. Put in pre-cooked rice and it became way too soggy, so just try putting the uncooked rice in and add extra rice. Cooked on high or 3 hrs, but could probably do less time. It was a little overdone. Also, added spinach at end, and just let it set in the soup for 5-10 mins before serving. Nice flavor.

Spinach Rice

Pretty good. Used about 2-3 cups cooked rice. I added 1/2 tsp garlic powder, diced chicken and on top I sprinkled bread crumbs. I also did about 1 cup onions

Italian Style Sausage

Quite good, but I add about 1.5 times the spices to get a stronger flavor. I also left out the anise and it was still good. I also did 1/4 tsp red pepper flakes for a better taste.

Roasted Vegetables

Cook the potatoes on one cookie sheet and the peppers, onions, and zucchini on another. The peppers etc. get done much faster (about 10 mins. They get overdone very easily). And cook the potatoes for about 20-30 mins. Spray the foil on the cookie sheets well. And stir veggies once or twice while cooking. Bake at 400 degrees. The balsamic mixture was good but not strong enough. I would do more of it on the veggies.

White Chili II

Great flavor. Made it in the crock pot, cooked on high for 3 to 3.5 hrs. Left out jalepenos to make it less spicy. Just melted butter and mixed with flour separately, then added to crockpot, and it thickened fine. Added green onions, mozzarella cheese, and a little sour cream when serving.

California Grilled Veggie Sandwich

Very flavorful. For sauce, used half the lemon juice, and it was still very tart. Just did grilled red pepper and red onions, as well as grilled chicken. Used store-bough bread and it was great. Didn't use zucchini and it still tasted great, although zucchini would probably be delicious too.

Tangy Honey Glazed Ham

Very flavorful. I had a 6.5 lb ham, but made the full glaze recipe, and having the extra made it tastier and easier to baste. I only basted 3 times, not every 10 mins, and it turned out great.
