Suki's Spinach and Feta Pasta
Great dish. I didn't have fresh mushrooms at home but did have a small jar of marinated mushrooms. I added fresh basil, used super greens (spinach, bok choy and kale), cherry tomatoes and tomato basil feta cheese. As other suggested I added a little bit of Italian seasoning. I placed sliced breaded chik patty on top (Morning Side's veggie version of a breaded chicken patty which is delicious!) and served with garlic bread!!!! This recipe is a keeper for sure!!!

Zucchini Alfredo
Our family recently went vegetarian for the next 30 days and this is a great recipe!! Yes, there are changes that can be made that make this recipe great. For instance I added double the amount of garlic, added oregano, a little adobo seasoning, and salt. I choose to squeeze the excess liquid out of the shredded zucchini before sauteing as well. Cream cheese does make this recipe nice but you MUST have Parmesan cheese, I added a combo of Parmesan, Romano and Asiago cheese (3/4 cup) to the sauce. I used the recommended amount of zucchini but also added spinach and fresh minced onion...yum. My two boys and my husband LOVED this!!!

Spinach Enchiladas
My family and I decided we would go vegetarian for 30 days. To my surprise my 10 year old and 8 year old boys want to do it all the time and only have meat on holidays (flexitarian). I decided to try this recipe because it looked great and it was! Like many I seasoned the spinach with cumin and onion powder but, I also added adobo seasoning and turmeric...WONDERFUL. Instead of using just spinach I decided to use fresh power greens (spinach, kale, bok choy). This recipe is a keeper for sure!
