Dill and Shrimp Salad

Made it as written except I halved the recipe. Marinaded it for two hours then served in fresh potato rolls with avocado and tomatoes. Hubby,mom and brother really raved. Such a nice,cool dinner for a hot summer day. Thanks!

Mini Baked Quinoa Patties

I thought I had leftover quinoa but it was couscous. It worked and was very good. Followed everything the same, except I put it in muffin tins to make little cups. Then baked until brown. Filled them with beef tips. Really tasty. My mom and husband really liked the taste and the uniqueness. Next time I will actually use quinoa.

Ken's Scallops

Made this dish last night for my mom, was fantastic! It was my first time cooking scallops. I didn't have basil so I just omitted it. I also added butter to the olive oil. Mom says it is the best scallops she's ever had. Thanks for a great post.

Blueberry Ricotta Squares

Loved this one! Mom, brother and husband all loved it to. I did not have the lemon extract so I used juice instead. Used butter instead of shortening and frozen blueberries. Usually the first time I cook any of these recipes I don't change anything but this time I didn't have the correct stuff. Really good and better the next day. Thanks, it will be made again and again.

Easy Batter Fruit Cobbler

I made this with fresh strawberries and frozen blueberries. All I can say is WOW! We had it at room temperature and the cake part was scrumptious. Kind of chewy like a candy bar. I doubled the recipe and added an egg to the batter. Will be doing this one again.

Pork Chops with Apples, Sweet Potatoes, and Sauerkraut

Mom and my brother really liked this dish. The flavor of the potatoes and apples is great.I used frozen sweet potato fries. Made making this dish very easy. The chops were a little bit dry. Not sure what to do about that. I will definitely make it again.
