German Apple Pancake

We cut the sugar and butter in half as others suggested (the part that goes into the pan not the batter) and used bananas (we had no apples). It was really good and extremely easy to make in my cast iron pan.

Crustless Spinach Quiche

yummy! I used mushrooms, frozen carrots/onion/celery mix, and frozen spinach. Also used only 1 1/2 cups of cheese and no salt as the cheese was salty enough. These are perfect when made in a muffin pan!

This is really good! I think next time I'll add an onion to the mix to jazz it up a bit. I really don't think this needs heavy whipping cream at all. Just a little half and half to cut down on fat/calories

Followed other reviewers suggestion to roast the peppers before hand. What a flavorful soup with so little ingredients! I substituted half and half for cream....honestly it didn't even need that much.

Low Carb Cauliflower Leek Soup

update: this is extremely easy with an immersion blender. after making this soup many times, i did try to roast the cauliflower and garlic beforehand. honestly it did nothing to enhance the flavor - the recipe is perfect as is! subbed half and half for the heavy cream, otherwise followed exactly....yummy! somehow i think bacon can only improve on the dish

Beef Stroganoff I

Pretty good for a simple stroganoff. I put the beef in wheat flour (seasoned with salt, pepper, and paprika) before cooking. I also added garlic, sliced fresh mushrooms, paprika, and red wine to the sauce. I used less sour cream (reduced fat) than called for and it came out pretty good.

B Muffins

Really fantastic (and full of fiber). I could not find wheat bran so substituted wheat germ (didn't taste a difference). I also replaced the oil with applesauce, walnuts with more blueberries, and sugar with splenda. I baked some in a regular size muffin tin and the rest in a mini muffin tin. The results were fantastic! The muffins were moist and the chunks of banana made them just sweet enough. I am definitely going to make these again and will try to add strawberries in the mix.

Grilled Beets in Rosemary Vinegar

Came out great! I ended up baking in the oven at 350 for 45 minutes and used dried thyme and fresh rosemary. The tartness of the balsamic vineger was balanced by the sweet beets

Slow Cooker Adobo Chicken

This was pretty darn good! I substituted 1/4 cup of water for soy sauce and added fresh mushrooms at the end. Served it over wheat pasta, but totally could have done crusty bread for dipping :)
