Roasted Asparagus with Balsamic Vinegar

I love this recipe! I make it all the time. My boyfriend who is not so fond of veggies loves it too! I add feta cheese to it before baking, and do everything else the same.

Lower Fat Chicken Vegetable Soup

There was nowhere near enough juices, I could tell from the recipe so I even added a little extra broth, it turned out like a stew, a very dry stew.

Mexican Rice II

Wow I can't believe how easy it was to make this. I followed the recipe exactly and it turned out great! It was a great base recipe. The next time I tried it and added in the Taco Seasoning I(from this website * 1 tablespoon chili powder * 1/4 teaspoon garlic powder * 1/4 teaspoon onion powder * 1/4 teaspoon crushed red pepper flakes * 1/4 teaspoon dried oregano * 1/2 teaspoon paprika * 1 1/2 teaspoons ground cumin * 1 teaspoon sea salt * 1 teaspoon black pepper Adjust how you like. I just eyed the seasonings. This time it turned out delicious!

Fat Free Refried Beans

Okay I have to admit I did not follow the recipe exactly so that may be why it did not turn out great. I started with 2 cans of beans, cut down on the water, used pre-minced "jar garlic", and did not use the liquid smoke. I tasted it and all I could taste was onion, so I added a whole other can of beans. I still had the same overwhelming onion taste, and like onions! I can't see how this could taste good at all with the amount of beans the recipe suggests.

Grandma's Chicken Noodle Soup

I tweaked it a bit: Used a rotisserie chicken, used half low sodium half regular chicken broth, and did not use corn starch. This was my first attempt at making chicken noodle soup It was delicious and my boyfriend loved it, and he doesn't usually like chicken noodle soup!

This was delicious and everyone loved my enchiladas! I followed some of the advice of others and added a bay leaf, used tomato paste not tomato sauce, and used chicken broth not water.

Antipasto Pasta Salad

This was the first pasta salad I have ever made. I was really pleased! I took the advice of som others and used salad dressing to save time, and wasn't thrilled by the dressing...I think next time I'll try it just how the recipe said to make it. Also, the dressing taste got milder after a day in the fridge and was great.

Granny Kat's Pumpkin Roll

Delicious cake, my family loves it! I make this every year now. I didn't have vanilla recently so I used the same amount of butterscotch liqueur, it worked like a charm and was wonderful. I also add about a 1/3 cup extra pumpkin puree. I had problems with the cake sticking or cooking a bit crispy in the past, and tried cooking spray, wax paper etc. This time I just greased the pan with vegetable oil on a paper towel it didn't get crispy and i just had to help it out with the spatula a bit.

P B and J Muffins

I live in Colorado about 5k from sea level, and I have had problems with homemade muffins before so I am not sure how much is altitude or the recipe. My muffins were crumbly very crumbly. And the peanut butter muffin part was very thick. Just didn't have the right balance. But we still ate them all!

Sausage and Egg Casserole

Pretty great! I have had better so I only gave it 4 starts. I took the advice of others and used spicy sausage and think it was made it much better than it would have been with regular sausage (it wasn't too spicy either).
