Vegetarian Tortilla Soup

Liked this recipe a lot. Even my 3 year old liked it. I did cut down on the cumin (2 Tbsp.) and used an immersion blender to make it smoother. I also added a cup of sour cream with the corn. Then just a splash of fresh lime juice. Simply lovely. Reheats well too!

Emma's Belgian Waffles

Been trying out a lot of waffle recipes. This one wins. Only changed from self rising flour to regular flour with 1 1/2 Tbsp of baking powder. Came out great!

New England Potato Soup

Very good. Even my kids liked it. I changed only a couple of things. I added a diced clove of garlic to the end of the sautéing. I also added carrots and a 1/8 teaspoon of Tabasco sauce. I also didn't have any peas; so I used a baby jar of pureed peas I had on hand for my daughter. Since I had to puree the soup or else my kids wouldn't eat it, it worked great! I served it San Francisco sourdough. Just great on a cold night.

Ultimate Twice Baked Potatoes

This was ok (and I love twice baked potatoes). I tried the recipe as is, but it needs a bit more kick to it. I'll try it once more but this time adding some chilies and Tabasco sauce to it.

Grilled Cheese Sandwich

Simply a classic and always a favorite. I usually add some green chilies or jalapenos to it and really spice it up. Also, sometime my bread is toasting faster than the cheese is melting. To speed up the melting, just cover the pan with a lid or another pan--the steam melts the cheese perfectly.

J.P.'s Big Daddy Biscuits

I have been using this recipe for years now. My kids like buttermilk biscuits; so I substitue 1/2 cup of milk with buttermilk and add a teaspoon of baking soda. I also split the shortening in half with butter and add 1/2 tablespoon of extra baling powder. To get the most out of this recipe, do two things. First, sift all your dry ingrediants together. Flour needs to be sift as it gets compacted over time in those flour bags. Second, cut in the shorting/butter well. I mean REALLY well. Do those two things and your biscuits will pop!

Buttermilk Pancakes II

Bacon Feta Beans
