Quick and Almost-Professional Buttercream Icing

Nice simple recipe. Not too sweet and no greasy shortening feel. Just need to double up the recipe to ice a whole cake.

great flavor and consistency. i agree that tempering the eggs helps. it took 4 mins for me, so just be mindful of your microwave power.

Sweet Coated Pecans

used vanilla extract instead of water and the 1/2 brown, 1/2 white sugar combo as recommended in previous reviews. lined a pan with aluminum foil and baked for 400 F for 25 minutes. It really speeds up the process and makes this easy recipe even simpler. the light coating is delicious and crunchy, not too hard or brittle.

Skiers' French Toast

I used challah bread with crust, and baked it covered with foil until the last 20 minutes. The trick to keeping the syrup from candying/burning is to bake it in a "bain marie." It turns out perfectly as it should be: custard like french toast in pure buttery, syrupy sweetness. **** Bain Marie (water bath) A cooking method where "one container with food to be cooked is placed in another, larger pan containing water... This method of cooking surrounds the food with very gentle heat and is used for cooking delicate dishes like custards..."

Easy Swedish Pancakes

Excellent recipe. I did add 1 tsp. of vanilla, I couldn't help myself. I love these light, thin pancakes. I whisk before I pour the batter each time. This little bit of extra attention helps in keeping the batter consistent from first to last. Delicious !!!
