Mom's Best Macaroni Salad

Reviewed: May 24, 2009
Excellent. Like other reviewers, I thought it was too much sugar so I left it out completely and ended up adding in a small amount of splenda. There was a lot of dressing compared to macaroni, so I only used about 2 thirds of it, and once it was all blended I thought it needed a few extra tablespoons of vinegar. I also added some cubed ham for my husband who's a ham fan. Very yummy- a keeper recipe for sure. Next time I might try adding chopped boiled egg for added protein and a flavor twist.

THE Pasta Salad

Reviewed: May 13, 2007
I am pregnant and having cravings. I was looking for a macaroni salad recipe, because it sounded good, although normally I don't like macaroni salad at all. I saw this one, liked the sour cream/mayo dressing idea, and made it with a few changes to suit what I wanted: I used elbow macaroni, omitted the mustard and hot sauce, subbed finely chopped red pepper for the onion and imitation crab meat for the ham. A dash of salt and pepper too. Not only was it exactly what I wanted, but my husband said it was very good too.

Brazilian Black Bean Stew

Reviewed: Sep. 17, 2006
A very good substitute for traditional chili if you want something with a little ethnic flare. I used Farmland type sausage, sliced, instead of chorizo, powdered garlic and dried cilantro instead of fresh, and fresh roma tomatoes instead of canned. Wonderful and unusual.

Chicken Pasta II

Reviewed: Sep. 9, 2006
Simple. Delicious. I didn't have any white wine so I used red wine vinegar. I used 6 roma tomatoes from my garden, and served over low carb penne rigate. Perfecto!

Jay's Signature Pizza Crust

Reviewed: Jun. 26, 2006
This recipe is a low-carb dieter's worst enemy! No need for premade crusts, mixes, frozen pizzas, or even delivery anymore. This is easy and so fantastic! I added a few teaspoons of garlic powder with the salt and oil for a little added flavor. As we like a thick, bready crust, I let it rise after putting in the pan for 15 minutes and it was fantastic. A bit of cornmeal applied to the pan after oiling gave it even more of a restaurant texture and appearance. Fantastic!

Mom's Best Pork Chops

Reviewed: Jun. 5, 2006
I made this on a really hot day and did not want to turn on the oven, so I cooked them longer in the skillet. Also, like some other reviewers, I used Ritz crackers because that is what I had on hand. I thought it was an excellent coating for pork, but I think next time I will use it on pork tenderloin I have pounded thin, and that way, it will be easy to cook through in the skillet.

A true five-star meatloaf. This is the one I've been searching for. My husband said I should make it when his parents visit next time. We enjoyed every bite!

Sauteed Garlic Asparagus

Reviewed: Jun. 5, 2006
The perfect asparagus. Super simple and tastier than anything else I have tried. I used garlic from a jar and it turned out great. I love it when you can dazzle in the kitchen with as little effort as this!

Sarah's Banana Bread Muffins

Reviewed: Jun. 5, 2006
This recipe was a snap from start to finish. These looked good at every stage of the process. I omitted the nuts and added in just over a half cup of butterscotch chips folded in at the end. As previous reviewers mentioned, they were quite sweet, and although the flavor went fantastically well with the banana, the butterscotch chips only added to the sweetness. Still, these were fantastic, so easy, and a delight to make.

Easy Fried Spinach

This was super easy and remarkably tasty for so few ingredients! I used sesame oil instead of the canola oil and added a dash of soy for a little Asian flare. Perfecto!

Chicken Tetrazzini IV

Reviewed: May 19, 2005
As other reviewers suggested, I added some chopped onion and chopped red pepper for added color and flavor. I also added garlic powder and italian seasoning for more flavor. I did not have any sherry so I used some red wine. I was extremely pleased with the result. The whole family loved it!

Slow Cooker Kielbasa and Beer

Reviewed: Feb. 5, 2005
I was EXTREMELY disappointed with this recipe. I was hoping for a new twist on the sausage and sourkraut I usually prepare, but found this to be soggy as other reviewers said. My recommendation is to cook your sausage in a skillet, add sourkraut and heat till warm, then drink your beer with the meal.

Split Pea and Ham Soup I

Reviewed: Jan. 13, 2005
I found this recipe to be very simple and very delicious. Instead of a ham bone, I used a can of chopped formed ham that came in a gift of Hickory Farms goods that I knew I would not enjoy otherwise and it was perfect for the soup! I did add a little celery and carrot because I had them on hand, and I used yellow split peas. My soup turned out excellent- very thick and filling.

Carnation® Quiche Lorraine

Reviewed: Jan. 13, 2005
This is a very simple yet very delicious quiche. I made it for breakfast when my in-laws were staying with us and they seemed very impressed with it. I used half and half when I found I had forgotten to purchase the evaporated milk and it came out wonderful. I also found that it was necessary to use a lot more egg - I used six extra large eggs in mine and it barely covered all my bacon, onion, and cheese filling in a standard pie pan.

Cherry Chip Cookies I

Reviewed: Dec. 20, 2004
I made these as part of this year's holiday treats for gift tins, and these were my favorite! Very light and crisp. I'm making another batch just for me! I think these might be good with butterscotch or white chocolate chips as well.
