Baked Potato Skins

Oh my these were DEEEE-LISH!!! I made these on New Year's Eve, but I did use OLIVE OIL and I pretty much doubled the ingredients because that is just how I roll! I used Russet 'taders and they were big, so I cut them in half lengthwise and then in thirds, I cannot wait to make these again! Oh, I also used the BAG of Mexican blend cheese. The next day I was craving them again, but they were GONE, of course, so I had some red potatoes that had been cooked in the microwave and I cut those in half and made us more. I think they were even more delish w/the red potatoes! This was so perfect, Trish, thanks for sharing your recipe! I wanted to do potato skins and these were out of this world! Mmmm mmmm!! (The next day we had sour cream AND avo dip on the side - oh HOLLUH!!!) Happy New Year!

Chocolate Chip Banana Muffins

used wheat flour added: 1/4 cup white sugar, 1t vanilla, 1/2 t cin, MINI chips, no topping, cover with foil while they are still warm and YUM! Spray your pan a LOT with butter flavored cooking spray and they will come out fine. My son has been eating these for breakfasy with a blueberry, banana, yogurt smoothie - yum! I also lowered the oven heat by 5 degrees and took them out before the posted time - just take them out when they look done!

Oatmeal Chocolate Chip Muffins

Okay, I ate THREE of these delicious muffins yesterday and had to stop myself from eating more! Only one so far today and plan to keep it that way. Anyway, READ the reviews first. I gave this recipe 4 stars because it definitely needed tweaking. I added 1t of vanilla, 1/2 t or so of cin, MINI choc chips and I lowered the heat by 5 degrees and cooked 5 mins less that what the recipe called for. )just keep an eye on them - all oven are different) Also, when they were almost cool, I covered the pan in FOIL and that "locked in the freshness". One thing I will do different is use whole milk instead of 2% - that was all I had and I would maybe add a large jar (stage 3?) of baby food - banana or apple sauce. It definitely needs moisture, but I did a pretty good job with what I changed and how I wrapped them up before they cooled off. My son has been enjoying these for breakfast with a blueberry/banana/yogurt smoothie - mmm mmm! Thanks for the great recipe! SOOOOO good with COFFEE!

Roasted Garlic Scalloped Potatoes

Yum! BUT only with some help! Instead of the thyme I used a few shakes on McCormick's MEXICAN SEASONING. I also used 2 cloves of garlic. Half cheddar and half pepperjack cheese. I probably used 4 cups total. Just eyeballed the cream. Oh! I also threw in a sprinkle of pepper flakes. Had a delicious kick and better color than the original recipe. Try it kicked up!

Simply Divine Meat Loaf with Spinach

DIVINE IT IS!!! I used about 3 pounds of quality ground sirloin, (gotta have sandwiches the next day!) so I kind of just eyeballed the amounts of ingredients. I left out the italian dressing, and could not find my worcestershire sauce, so I used A1 steaksauce - yum-meeee!!! I used a bit of the original and then some thick and hearty - SOOOO YUMMY! I also used the beef and onion soup. Thanks Heidi for a wonderful recipe! My 7 year old LOVED it and dad will be home soon to eat as well! YUM! Was not salty at all!

Spinach Stuffed Chicken Breast

YUM! I seasoned the breasts w/seasoned salt and ground pepper. To add some KICK to the recipe I added some crushed red pepper flakes to the spinach mixture. Not bland at ALL. Next time I will probably just lay the bacon on top as the underside was uncooked and I should have taken it out of the oven sooner, but I was trying to crisp up the bacon. I may pre-cook some bacon next time and I WILL be making this again soon! Plus I used a lot more pepperjack than called for. YEAH!

Mexican Chicken Corn Chowder

I forgot to add this to my review! As far as the corn goes, I added the one can of cream corn the recipe called for, one can of whole kernel corn and a can of the mexican corn with the milti colored bell peppers in it! very pretty and delicious to boot! It was almost like a stew, and that is how we like it!
