Sweet Potato Casserole I

This is excellent. I have made other variations, but this seemed creamier and a little lighter than most others. Did not have the pecans on hand so made without and did not miss at all!

Bada Bing Pork Chops

Fabulous Fried Cabbage

Very good recipe. Made exactly as stated and my husband loved it (even though he is used to southern style with bacon grease). Next time I will try without the butter to see if it is as good-even lass fat!

Spinach and Rice Alfredo

This is a very good combo and way to use fresh spinach. I h!ad some cream and a bag of spinach that were about to expire and stmbled across this little gem of a recipe. My husband was not too fond, as he is not a spinach lover, but I thought it was great

Chicken Scampi II

This was very good. I read the reviews and added extra garlic & lemon juice, red and green bell pepper, white wine and mushrooms. Would cut the butter in half next time. I guess it was a hit- I cooked for hubby and teenage son for Valentine's Day and there is not evenn enough left for lunch tomorrow. Definitely double for more than 3!

Easy Key Lime Pie I

OMG-this is the BEST! Key Lime Pie is my husband's favorite and now I can serve him a restaurant quality product. I made the recipe as written and realized is was not nearly enough filling (especially for the 2-extra slice graham cracker crust I had purchased). Went back and read the reviews, scooped out the filling and added another can of sweetened condensed milk and 1/2 c. key lime juice. Perfect fit-baked 20 min. -chilled 4 hrs. prior to serving. Excellent!

Quick and Easy Green Chile Chicken Enchilada Casserole

This was a very tasty casserole. Used "medium" green enchilada sauce-just the right flavor. Also used par-baked flour tortillas (something new at my market) and browned in a hot electric skillet. Used 8 tortillas and cut the ingredients in half. Will make again!

Fried Sweet Potatoes

My mom made sweet potatoes like this, but without the brown sugar.Just salt and pepper, fried in butter. I didn't there was any other way to cook then! Easy and good.

Baked Ziti I

This was excellent. As others suggested, I added 2 cloves of garlic with the onion. Also seasoned with a little oregano, pepper and red pepper flakes. Since I was cooking for 3, I used about 10 oz. mini penne pasta and just one jar of sauce. Also cut back on sour cream and cheese accordingly. Definitely a keeper!

Used the sauce recommended by Peachesncream2-very tasty. Otherwise followed instructions. turned out well - so much depends on the quality of the ribs used! Cooking method is great for a cold winter day.

Jambalasta

Excellent blend of spices without being TOO hot. I left out the chicken and added garlic sausage because I had a bunch of leftover shrimp to use. Becasue the shrimp was already cooked, I sauted the sausage with the onion and and a diced bell pepper and dumped in the crock pot with all the remaining ingredients except the shrimp. Cooked all afternoon and threw the shrimp in to warm before serving. Served once over rice and also over spaghetti noodles. Both equally excellent.

Slow Cooker Turkey Breast

I tried this with the celery and onion beneath as suggested by prior reviewers. Put on before I went to bed New Year's Eve for a super dinner at noon on New Year's Day. Moist and flavorful even though it cooked a long time. Moved to a warm oven around 10 a.m.

Artichoke Dip

I have made this recipe for years (minus the green chiles). The key is to use Hellman's mayo ONLY and make sure you use well-drained and chopped artichole hearts in brine (not marinated). When done in this fashion, this is always the first appetizer to go. Much better warm- I prepare in a quiche dish serve on a warming tray with triscuits.
