Baked Scallops

I'm not sure what happened, but this wasn't very good. The breading/topping was mushy. I love scallops but this recipe just did not work out.

Crustless Spinach Quiche

This was awesome. My boyfriend and I made it for our moms for Mother's Day brunch and everybody loved it. I followed the advice of other reviewers and cut the cheese in half, and I also used Egg Beaters instead of eggs, but it was just as good as any quiche I've had. I added roasted red peppers to it too, and may experiment with some other veggies in the future. Delish!

I loved this recipe. I used plain non-fat yogurt instead of sour cream and it still turned out delicious and very moist. Next time I will add walnuts!

Chickpea Salad II

This was so-so. I was excited because I really like all the ingredients - especially chickpeas and balsamic vinegar - but it just didn't really do it for me. Nothing really wrong with the recipe, though.

Black Bean and Salsa Soup

This was extremely fast, easy, and delicious. And very filling! We didn't even bother with the sour cream and green onions and it was still wonderful. I served it with cornbread. Yum!

Hot or Cold Vegetable Frittata

I made this for Mother's Day brunch for my mom and my boyfriend's mom (and my boyfriend) and it was a really bit hit. It's great as it is but next time I will probably add more vegetables because I love them and there's definitely room for them. I highly recommend this. My boyfriend's mom already asked me for the recipe.

Asian Salmon

My boyfriend and I love salmon and we loved this recipe. I added a tablespoon of minced ginger, and though I only used a pound of salmon, I made the whole amount of sauce, which seemed like just the right amount. It was fantastic.

Eggplant Parmesan I

This was my first time making eggplant parmesan, and it went pretty well. I played kind of fast and loose with the measurements and added some garlic to the cheese mixture. I served it over angel hair pasta tossed with pesto. It wasn't the best thing I've ever eaten, but it was definitetly tasty and we're looking forward to having the leftovers this week. I'd make it again.

Cabbage Roll Casserole

My boyfriend and I both loved this recipe. It was delicious and really easy to make. I followed the suggestion of several other people and cooked the onion along with the beef. I also used shredded coleslaw mix (mostly cabbage with a bit of carrot) because I felt lazy about chopping the cabbage, and it turned out great. Like many people I cut the recipe in half, and there was still a ton of it. I will definitely make this again and pass the recipe along to anyone I know who likes cabbage rolls.

It's Chili by George!!

This chili was fantastic. It was my first time making chili and it was extremely easy. I'm kind of a baby when it comes to spicy stuff, but this recipe had just the right amount of heat. It was a little bit soupier than I'm used to, but once we mixed tortilla chips in it was fine. My boyfriend raved about it, and I'm about to email the recipe to my mom. Thanks, George!
