Homemade Chocolate Sandwich Cookies

I made this exactly as written but used a spice cake and a carrot cake that is all I had also added raisins. I got 26 filled cookies(which would have been 52 cookies)I made them for church and they were a big hit. Do not taste like cake mix cookies :)

Frosted Banana Bars

I just made these and used apple sauce (no butter) Splenda (no sugar) Fat free sour cream and no frosting used free cool whip now they are diet friendly and okay for diabetics and they are good. Do not rise as much next time I will use smaller pan.

Mexican Bean Salad

I made this today I doubled recipe because we are having a chili cook off at church and that is what I am takeing. I made it exactly except I used apple cider vinegar, that is all I had and added black olives, green olives and yellow, orange, green and red peppers. I used 4 cans beans black, white, dark red and light red. I put it in a canister type container with a tight cover then I rotated the container every half hour. Not to much dressing just right it is an amazing salad and I'm not fond of beans. When I tried it I couldn't stop eating it. Thank you for a great salad

Zesty Tomato Soup for One

I love the idea. I do almost the same but I use fresh tomatoes about 40 medium tomatoes. (we have a garden and lots of tomatoes) 2 beef boullion cubes and 2 onions quartered. I do not add any liquid, or do I peal the tomatoes just quarter them. Put them in a pot and simmer about 2 hours, then put everything in blender and then strain. Freeze in small batches when hungary you just take out what you need. My husband likes a little 1/2 and 1/2 added to his.

Fruited Coleslaw

Is very good but I left out peaches, celery and marshmallows. I added 1//8 cup sugar, marchino cherries, chopped walnuts and chopped dated. I served at Christmas and it looks as good as it taste.

Unstuffed Cabbage

This picture is the exact same picture as on Sparkpeople but the recipe is different I have made the other recipe and it is better than this one. the other recipe calls for 1 pound ground beef, 1 medium cabbage chopped, 1/2 cup longrain rice, 1 large onion chopped, 1 bell pepper chopped, 1 cup water, 1 can diced tomatoes(large), 1 can tomato soup, garlic paprika salt and pepper to taste. This version is very good and can be done in crock pot also.

Cod au Gratin

I made this for supper tonight, changed very little. I used same measurements only had skim milk and used real butter I only had grated sharp and regular cheddar 2 cups in bag. I made the white sauce then added the cheese to white sauce. After boiling fish and draining I layered it in baking dish added half of sauce over fish then added a layer of frozen broccoli then the rest of sauce. I then added the rest of the grated cheese on top and baked 45 minutes. It was delicious and I am not that fond of fish. Will make again good enough for company, served with long grain and wild rice.

Navy Bean Soup II

Use Great Northern Beans and put half of soup in blender when done then mix all together is much creamier. Add a little brown sugar and it taste like baked bean soup. Can use half ham and half bacon if you want. Gave 4 stars because I changed it some. I use to have a daycare and the kids liked it because it was sweet (and healthy)

Zucchini Brownies

I made this exactly as written but it came out like a cake. My batter was not stiff so perhaps the zucchini was not drained enough. The cake was moist and delicious everyone loved it and couldn't believe it was made with zucchini. They all thought it was a cake so I didn't tell them any different.

Melt - In - Your - Mouth Shortbread

I only changed the way I put them on the cookie sheet. I made little balls and used a cookie cutter press to push the cookie flat and leave a little ginger bread boy in the center of cookie really cute.
