Oh My Goodness!!! I made two of these for a potluck and YUM! Everyone raved about how beautiful it was, and how good it was! My only problem when making them---I made one Tues night, and one Wed night. When I melted the sugar, it took forever (30 min??) to turn 'golden' and never did turn into a liquid. I finally just dumped it in the pie plate and finished the recipe. It still tasted great, but the caramel topping was a much lighter color. The 2nd night when I made the 2nd one, the sugar melted in 5-10 min, to a liquid, like it was supposed to...Strange. The only thing I did different was that I washed the pot out with soap and hotwater first (maybe it was still a little damp when I put in the sugar, and that helped it to liquify faster?) and I also used a silicone spatula to stir instead of a spoon like the night before. Both tasted AMAZING, just the 1st one I did had a lighter colored caramel topping, but still came out great.
