Gluten-free Chocolate Chip Banana Muffins

I made a few adjustments and my muffins came out incredibly moist and delicious. I used: 1 cup gluten-free oat flour 3/4 cup brown rice flour 1/8 cup ground flax seed 1/2 cup sucanat 1/4 cup brown sugar I replaced the oil with 1/2 cup whole-milk greek yogurt and didn't use any more yogurt, but had to give batter a splash of milk to thin it a bit.

Kale and Spinach Saag

This was very good. I used mustard greens instead of kale as I thought mustard was more traditional. I didn't have a full cup of of cottage cheese so I used some neufchatel cheese in place of the remaining cottage cheese. I also added some grated blend (cheddar and monty jack) at the end. The flavor improves with sitting.

Butternut Squash and Turkey Chili

This is surprisingly tasty. I was concerned about how it would turn out when I smelled the tomatoes in the pot with the turkey. The character of the smell changed entirely when I added allspice as recommended by another reviewer, and I'm so glad I used that suggestion! I also used shredded turkey I had leftover from a whole roasted turkey. I will try it with ground turkey next time just for comparison.

Very good. I made this as a dessert accompaniment to the Moroccan Tagine recipe on this site, and it was a nice balance to the spiciness of the Tagine.

Sausage Barley Soup

Wow! This is my new favorite soup. I can't wait to make it again. The only change I made was to add a healthy pinch of crushed red pepper flakes, and simmer it in a crock pot all day.

Gingerbread Pancakes

These are tasty, but would benefit from the addition of sugar to the batter. We topped our pancake stacks with whipped cream and a sprinkle of pumpkin pie spice.

Rosemary Ranch Chicken Kabobs

This was loved by everyone in my family of six, even earning me extra praise from my 5 yr. old: "Mom, you're best cook of all the food in the world!" I avoid additional sugar, so I left it out. I used Annie's Naturals ranch dressing since it is all-natural and low in sugar. I used both fresh rosemary and fresh thyme from my herb garden, and added a little extra lemon juice. Some skewers were made with just the meat. For those of us who like veggies, I made shish kebab with the meat, red bell peppers, mushrooms, zucchini, and Walla Walla onion. Outstanding!

Bean Soup

WOW! Outstanding soup! I grew up on Campbell's Bean & Bacon, but will not resort to that again. The flavors of this are much more complex and satisfying. The baking soda trick was GREAT -- be sure to rinse off the beans with cold water a couple times. I made the following alterations: After cooking the beans, I put them and the remaining ingredients into a crock pot and cooked on low overnight. I used two smoked ham shanks instead of a simple ham bone, and used diced smoked turkey kielbasa in place of diced ham. I sauteed the veggies in a little olive oil before adding to the crock pot. Used good, rich chicken stock instead of water and did NOT add any salt. A couple good shakes of Tabasco added the necessary balance.

Chicken Pot Pie IX

Very good and enjoyed by everyone. I followed other reviewers suggestions and added poultry seasoning and garlic powder. Also used frozen veggies in place of fresh. Instead of using pie crust, I topped the meat & veggie mixture with corn bread dough and baked for 25 mins at 400 degrees. Next time, I will make more gravy as it did not have enough to suit me.

Sherry Sour Cream Chicken

This was very good and smelled great while baking. Per other reviews, I added onions, mushrooms, and minced garlic to the sauce. I didn't have fresh herbs available, so used dried "Tuscan herb" blend. It was still very tasty. Served with roasted root vegetables and green salad.

Pumpkin Crisp

Quick, easy, and crowd pleasing! My only substitution was using a Cinnamon Swirl cake mix (Betty Crocker) I had on hand, instead of using yellow cake mix. It was probably better for it.

Greek Lemon Chicken Soup

I was only going to give this 4 stars since it was not a hit with my family, though I loved it, and my best friend and her two kids were fighting over the sample that I brought over to them. Alas, I finished the remains when I returned home and decided it needs 5 stars. Made the following changes: just used 1 1/2 TBS chicken soup base in water; eliminated the celery; sauteed onion with 2 cloves garlic in EVOO before adding to soup; only used 2 TBS butter & flour to make a light roux, added some broth to the roux before adding back into soup; added 1/2 cup uncooked orzo pasta during last 10-15 mins of cooking; only used 4 egg yolks; used a roasted chicken from grocery which I skinned, boned, and chopped before adding to soup; garnished w/ fresh, minced parsley

Baklava

Phenomenal! So tasty and easy to make. I made this for a special end to Father's Day dinner, and everyone immediately went back for seconds and thirds. I added lemon zest to the syrup as it simmered. And I added about 1/3 more cinnamon than the recipe called for. We did not think it was too sweet.

Cilantro Chicken Salad

We really enjoyed this. The flavors are very light and refreshing. This would be a perfect summer supper salad. I ate it over fresh baby greens. The teenagers mixed it into some stir-fried sesame rice noodles, as well as ate it over the fresh greens.

Pumpkin and Sausage Soup

This was surprisingly excellent and very well received at a potluck. I used a medium-spicy sausage handmade by my FIL instead of buying Andouille and it was perfect.
