Jam Filled Butter Cookies

Reviewed: Dec. 23, 2007
I'm sorry to rate this so low however, I found these cookies to be very tough, thick and lacking in flavor.

Candy Cane Frozen Mousse

Reviewed: Dec. 18, 2007
A little goes a long way. VERY sweet. I crushed the candy canes very small based on a previous review and actually thought chunks would have given it more of a peppermint taste. I took it to a Christmas luncheon and was very disappointed. 1/2 of the people didn't finish it.

This is a wonderful recipe. It really makes a big difference to add the nuts. I have also used walnuts. YUMMY!!

Pork Medallions with Dijon Sauce

Reviewed: Nov. 17, 2007
Quite tasty. As pork can tend to be tough, after browning the porkchops, I moved them to another frying pan with a small amount of wine and covered them to finish cooking them. It seemed to make the chops more tender by steaming them a little.

Made for a special brunch and it was a big hit. It has a similar consistency to bread pudding. Very good.

Absolutely the Best Nacho Dip Ever

Reviewed: Sep. 28, 2007
The cocktail sauce makes a big difference in this dip. I really like it alot. It also doesn't have refried beans which seem to dominate most other nacho dips.

I initially used this recipe because I wasn't able to marinate the steak overnight. Now I use it because I really like the taste.

Fresh Tomato Shrimp Pasta

Reviewed: Sep. 28, 2007
I love this recipe and have made it many times. I would recommend that you do not skimp on any of the ingredients. I made the mistake of not adding as much of the seasonings and it was bland. I have also made it without fresh basil and oregano but I would never do it again. Fresh is imperative to the flavor of this recipe. I also add at least double the spinach if not more and it still doesn't overwhelm the other ingredients. Lastly, I like to use freshly shaved parmesan cheese instead of the mozzarella at the end.

Tomato Chicken Parmesan

Reviewed: Sep. 28, 2007
This is a staple for my family. I prefer to flatten the chicken prior to dipping in egg and breadcrumb/cheese mixture. I have used provolone and mozzarella at the end when I didn't have mont. jack. Still really good.
