Kentucky Butter Cake

Everyone loved this cake! I exchanged the vanilla for rum and coconut extract. (1 tsp each). The buttery sauce was yummy too! I will look for a better way to get the sauce to sink in though. It might work better if you slice it- then pour on the sauce. Still wonderful regardless!

Sweet Baby Carrots

Very easy. Tastes even better the second day when the carrots have had time to soak up some more flavor. I had a lot of liquid in the pot though- after I drained and added the butter. It didn't take away from the taste- but you may need to drain some of that off before serving.

Light Oat Bread

This is wonderful! The only change I made was using 3TB of brown sugar instead of 2. I think the texture is great- not too dense and not too fluffy. I baked it on light crust. I love that I always have these ingredients on hand. AND- the recipe is way easy for the payoff. This just might be my go-to bread from now on.

Sweet Corn Cake

One Bowl Chocolate Cake III

My husband thinks this is the best chocolate cake ever! I think it's pretty good- but a little heavy and moist for my taste. Really, it's all in finding a good icing! One great thing about this recipe is that I almost always have the ingredients on hand!

Easy OREO Truffles

What can you say? SO good. Sometimes the chocolate can be hard to deal with, but once you get the swing of it, it's easy. Mine didn't look as pretty- but they didn't last long enough to get a good look!

Six Can Chicken Tortilla Soup

I followed suggestions- adding cumin, garlic powder, chili powder and used 1/2 cream of chicken instead of 2 cans of broth and adding my own grilled chicken. It took less than 20 minutes! My husband loved it and I will deffinitely make it again. I think I might add a can of plain diced tomatoes next time too.

I've had this with whipped cream too- Wonderful! The perfect bite: cinnamon/sugar tortilla chip, whipped cream on that- topped with the fruit salsa....mmmm!

Coconut Cream Pound Cake

This was super easy! One bowl! I didn't use any icing so it was a tad dry. But I brushed on some simple syrup with rum extract in it- yum! This would make a wonderful cake layer. The only change I made was reducing the sugar a bit because I was using sweetened coconut flakes.

Ultimate Chicken Fingers

I make this quite a bit. Super easy! I usually don't drizzle the butter over the chicken though- works fine. They can be a little sticky on the foil- but I use my tongs to genly shake them free. This totally quenches the craving for friend chicken for me.
