Easy Slow Cooker French Dip

This actually turned out a little on the dry side for me....maybe I kept it in the crock pot too long. Once I smothered it with cheese it seemed to be a little better.

Roast Sticky Chicken-Rotisserie Style

We halved the recipe and just made one whole chicken. Delicious! Definitely use a meat thermometer to check the internal temperature of your chicken to be sure it is done.

Fresh Strawberry Upside Down Cake

Very refreshing and light. Got carried away and completely pureed the strawberries. It still turned out beautiful and delicious. Could not taste the marshmallows at all (good thing for me, b/c I don't really care for them). I may try to make this with an angel food cake next time just to lighten it up even more. Served with vanilla bean ice cream, but would be great with whipped cream on top too.

Strawberry Avocado Salad

Great salad. Added very thinly sliced red onions to the salad, and 1Tbsp poppy seeds to the dressing. It seems like it doesn't make enough dressing, but it is plenty! I agree with the reviewer who said adding goat cheese would make this salad superb! Hubby normally hates fruit in his "green" salads, but he loved this.

Make Ahead Lunch Wraps

Perfect! Followed the recipe exactly, no changes. Of course, hubby would prefer "meat" in these, but they are great w/o it. Freezes very well for a quick lunch.

Overnight Blueberry French Toast

Made this for Christmas morning breakfast and have to say that I wasn't all that impressed. My family ate it and liked it, but it wasn't quite sweet enough for me. I did find that mixing the cream cheese/bread with my hands helped spread everything out evenly.

Jenny's Grilled Chicken Breasts

Maybe it's because I froze the chicken in the marinade before I thawed/grilled it, but it was WAY too lemony for my taste. It did keep the chicken very moist, and I will probably just use the leftovers on top of salad tomorrow for lunch, but unfortunately not a hit at my house!

Slow Cooker Spicy Black-Eyed Peas

Usually, corned beef is the star of the meal for us on New Year's Day, but not this year! Everyone raved over these! I used broth instead of cubes, no salt, and just let these cook on low all day long. It was so good I was still eating it for lunch with corn bread the whole next week.

Pizza Casserole

Made a couple of changes just b/c I used what I had on hand. Pasta sauce instead of pizza sauce, Rotini instead of egg noodles, and mushrooms instead of green pepper. It was very good. Also, this dish freezes very well.

Quick and Easy Chicken Noodle Soup

This soup was out of this world! I will no longer ever buy canned soup!! I boiled Amish Egg noodles in the broth and then added the cooked veggies, chicken, and spices. I also used a rotisserie chicken from the grocery store. Could not have been easier! Thank you for the recipe.

Whipped Cream Cream Cheese Frosting

This frosting tastes great, but it was kind of a hassle. I chilled my mixer and bowl, and whipped the heck out of it, and everything was fine, until I frosted my carrot cake...about half way through frosting it, the frosting began to get thin and runny. I just placed the cake in the fridge and served it cold, but next time I will switch to powdered sugar and use less heavy cream. Very light taste though and everyone liked it, despite the appearance.

Sam's Famous Carrot Cake

I've tried the carrot cake that is rated #1 on this site and Sam's cake, and I've got to say that this cake is by far the best tasting. Very moist and full of flavor. I omitted the raisins and nuts just b/c of personal preference and increased the carrots to 3C. Next time, I think I will leave out the coconut too...it doesn't need it.

Bodacious Broccoli Salad

I used fat-free yogurt instead of mayo b/c hubby hates mayo. I think I will cut back on the red wine vinegar next time, as it was too noticeable for my tastes. Also, be sure to add craisins and sunflower seeds, it really gives it great texture!

Brownie Frosting

Did not care for this at all! It was way too sweet and the texture was grainy. Took this to a family reunion and only almost the entire pan was left. Definitely not a hit on our dessert table!

Pesto Cream Sauce

This recipe is very good AS IS,but it is VERY rich and heavy. Next time, I think I will cut back on the butter/cheese to lighten it up a little bit. I also made my own pesto sauce for this recipe, and subbed chicken sausage instead of shrimp due to a food allergy in the family. My 18 month old gobbled this right up. My husband kept calling me a gourmet chef. HAHA!

Deep-Dish Blackberry Pie

I accidentally bought Mulberries instead of Blackberries, but this still turned out delicious. Doubled the crust and used half for the bottom and half for the lattice top. The crust is amazing!
