This frosting tastes great, but it was kind of a hassle. I chilled my mixer and bowl, and whipped the heck out of it, and everything was fine, until I frosted my carrot cake...about half way through frosting it, the frosting began to get thin and runny. I just placed the cake in the fridge and served it cold, but next time I will switch to powdered sugar and use less heavy cream. Very light taste though and everyone liked it, despite the appearance.
