Black Bean and Salsa Soup

My husband loved this and good way to add more beans to your diet! I used the chicken broth and saved 1/2 cup beans to add back as was suggested. I also used a mild salsa and a dash of garlic powder. I buy a "seasoned" black bean instead of plain,(don't think they will let me say the brand) which may have more flavor, even rinsed, than plain canned black beans. If I had some available, I would have loved adding some cilantro to the garnish but it was excellent the way it was. This is going to be a regular in our house!

Asparagus, Chicken, and Pecan Pasta

This is excellent with the Chicken/Feta/Spinach Sausage suggested by the chef Julie! I browned and sliced the sausage, set it aside. I also used whole wheat bow-tie pasta, dried basil, only one large bunch asparagus and walnuts (I lightly toasted)plus a full can, 14oz of chicken broth - added some seasoning salt to the broth & veggies for extra punch - this is so tasty and makes a huge bowl full. This recipe is a definite keeper! I think the sausage added that extra flavor that some reviewers said was missing!

Sweet Hot Mustard Chicken Thighs

Loved this! Followed recipe exactly as John said - love the video and his sense of humor! This is a definite keeper - mustard flavor mellows and is not over-powering! Love the onions with it - and the foil makes super easy clean up. Didn't use such a high oven and it still cooked in same time & browned beautifully! We have this often - only thing I do different is slice up a bunch more onion and only skim the fat (if there is any) from the pan - other wise I don't bother reducing. My husband, who doesn't really like dark meat loves this recipe too and he says the guys at work are jealous of his left overs lunch!

Marinated Baked Pork Chops

Had 3 very large pork chops and doubled the recipe - marinated them instead of just brushing on before baking. Baked in the sauce and then served leftover sauce over pork chops and my husband topped his rice with it as someone else suggested - it was good - not super sweet like so many barbque sauces - liked it well enough to add it to my real recipe box

Marinated Grilled Shrimp

This recipe is not the same as the one featured in the video - there was no red wine vinegar,basil or tomatoe sauce in the video - they used tomatoe paste and oregano. Also black pepper and I believe red pepper flakes ...........hmmmmm something screwy here!

MeeMaw's 5-Star Coleslaw Dressing

This is Fabulous!! Tastes so much like "famous chicken fast food" slaw dressing. I adjusted servings for four - only used a heaping 1/4 cup mayo making this very economical - was enough for medium size cabbage, carrots, red onion slaw. Didn't have any celery seed - didn't miss it either! Thanks for sharing!
