I have made this three times now, and it is so good!! I double the chili beans, black beans, corn, taco seasoning and chicken- use frozen chicken breasts- it fills up my large slow cooker that way. I cook it for about 7 or 8 hours on low- usually at night. The chicken is so tender- it shreds with two forks! DEFINITELY use Bill Echols "taco seasoning I" from this site!! Serve over some tortilla chips- I add sour cream, my husband and kids do not- too good!! Freezes well too!!!
