Slow Cooker Beef Vegetable Soup

OH WOW! I was concerned about the canned vegetables- but oh, my goodness- it turned out so great! Doubled it and froze half- still had a ton for dinner- added some pasta and my family ate it up! Thanks!

New Orleans Corn Bisque with Smoked Sausage

This was okay. Had to add a LOT of Cajun seasoning and some Cayenne pepper. Used garlic, frozen corn and canned cream corn as previously suggested, as well as spicy smoked sausage and more potatoes. It is easy, but definitely bland if not spiced up.

Slow Cooker Chicken Taco Soup

I have made this three times now, and it is so good!! I double the chili beans, black beans, corn, taco seasoning and chicken- use frozen chicken breasts- it fills up my large slow cooker that way. I cook it for about 7 or 8 hours on low- usually at night. The chicken is so tender- it shreds with two forks! DEFINITELY use Bill Echols "taco seasoning I" from this site!! Serve over some tortilla chips- I add sour cream, my husband and kids do not- too good!! Freezes well too!!!

Boudreaux's Zydeco Stomp Gumbo

WOW!! I lost my favorite gumbo recipe and decided to give this one a try. YUM! I doubled the chicken and sausage, used canned diced tomatoes in place of roma, substituted some green chiles and jalapenos for the red chiles (could not find any!), and added two small bags of frozen okra. Served it over rice- amazing!! It made so much that we have eaten it for a couple of days and I froze a large container for a quick weeknight meal!! Thanks!

Squash Casserole II

I omit the carrots and use 2 boxes of stuffing with 1/2 cup margarine. I mix the margarine with all the stuffing, then mix 1/2 the mixture with the squash mixture and place the other half of the mixture on top. YUM!
