Party Pinwheels

The only change I made was using chopped olives instead of sliced, and I accidentally bought the 8" tortillas, but I just had 6 then, instead of 4. These were SO good, and they went so fast, I didn't even get one. I got to eat the ends though, so it's OK. I will make these many more times, probably upon request, because they were RAVED about! Also plan on doubling them, it made way less than I would've figured, and most people wanted more than one.

Easter Breakfast Casserole

This was very good. I made a few modifications: green onion instead of regular, I salt & peppered the hash browns and placed them in the dish, then prebaked 12 minutes. Next time I will go 20, since I would like them browned. Also, an 11x7 pan is nowhere NEAR big enough for this, I used a 9x13 glass dish and it was perfect! Next time I might cut down the shredded cheddar to 2 cups, it was a little too rich for me. Make sure your bacon is super crispy when it goes in, the less crispy pieces were soggy/chewy. Sausage would be very good in this, or finely chopped ham, as others have done. You could also leave it out completely. I will make this again!

Mmm-Mmm Better Brownies

This is a great basic brownie recipe, nothing fancy. Sometimes you just need a pan of brownies in short order, and you don't happen to have any unusual ingredients on hand: this is your recipe! I stirred 1/2 cup of chocolate chips into the batter because I had them taking up space in my cupboard. I will be making these over and over again!

Cajun Chicken Lasagna

This dish is AMAZING! I did make a few minor changes. I did not preboil my noodles, just spread 2/3 cup alfredo sauce on the bottom of the dish, and poured 3/4-1 cup of water around the edge of the dish right before baking. Perfection! I threw diced green bell pepper in. Couldn't find andouille, so I used sweet Italian turkey sausage. I used two full 15oz. jars of Classico Creamy Alfredo. Changes for next time: use less chicken (just one whole breast) and shred it. I also will not use the entire 19.5oz. package of turkey sausage. I would like to add some seasoned diced tomatoes to the mixture. Definitely adding this gem to my regular rotation! Calorie-dense, so it's good for a day when you worked out for an hour at the gym in the morning, and shoveled snow for an hour after work!

Bake Sale Lemon Bars

I made these exactly as written with no changes. I liked them well enough, and my BBQ guests ate them and said they were good. I have had better, and would like to try making these with GOURMETMOMMY's suggested changes. They were MUCH better the 2nd day! My husband said I could make these every week and he'd be thrilled.

Cream Cheese Penguins

I brought these to a Linux User Group party, and they were a hit! I used flavored cream cheese, which made them quite tasty. They want me to make them every year now. They were a little bit of work, but worth it.

Ham and Swiss Casserole

This was excellent! I added cream of mushroom soup and left out the mushrooms. Next time I will also cut down on the salt, maybe to 1/2 teaspoon. I'm definitely adding this to my regular recipe rotation!

Baked Ziti I

This was very good, but I'm only giving it 4 stars. I added lots of seasoning (pizza seasoning, and Italian herb seasoning), used a full 8 oz. of mozzarella, and next time I will add a couple more slices of provolone. I also made it with rotini because that's what I had on hand, and it worked perfectly. I layered the sauce mixture directly over the noodles as suggested by others.

Ginger Snaps II

These cookies were delicious, and so pretty! I did make a few changes: I added another 1/2 tsp. ginger, 1/4 tsp. cloves, and 1/4 tsp. nutmeg. I also made them bigger (I got 26 cookies), so they needed to bake a few minutes longer, around 13 minutes. Next time I will cut the salt down, somewhere between 1/4 and 1/2 tsp.

Easy Apple Crisp

I served this on Thanksgiving and it was a hit! Even my sweets-hating family raved about it. I used the suggested changes: 3/4 cup water, 3/4 cup brown sugar, 1/2 cup old-fashioned oats added to cake mixture, baked for 45 min, and I also threw in 1 tsp. baking spice with the cinnamon. Excellent with vanilla ice cream, french vanilla cool whip, or all by itself. I will be making this a LOT!

Self-Filled Cupcakes I

These are the best cupcakes ever! I made them for my kids' birthday party and everyone loved them. I made a few changes: substituted Neufchatel for the cream cheese, and made the filling with Splenda instead of sugar. I also used mini-chips, since the first time I made these, the filling sank to the bottom. The mini-chips work better. I used all the filling except a Tablespoon or so, and had about 3/4 cup of cake batter leftover. I will do it this way next time, it's better if you use lots of filling (like half batter, half filling almost), then just drizzle a little more batter over the top. This makes 24 cupcakes, not 12.

Rhubarb Cobbler

This is a great summer dessert, especially served warm with vanilla ice cream. Even my rhubarb-hating husband liked it! Next time I might put a pinch (or two) more salt in the flour mixture. I recommend using Penzey's Ceylon Cinnamon in this recipe, that particular unique cinnamon really enhances the flavor of the rhubarb filling. It takes a good recipe for rhubarb to thrill me, and this one did it.

Rhubarb Strawberry Jam

This is great jam! I chopped the rhubarb pretty small though, because I don't like large chunks of rhubarb, and I cooked it an extra two minutes. I will definitely make this jam again, and maybe use different flavors of gelatin.

Cinnamon Rolls I

These were fantastic! I made them as written except I only spread 1/4 cup of butter on the dough. I will make some changes next time, I will do either 1.5 or 2 times the caramel sauce, and I will also not cook the caramel sauce for 2 full minutes, it got a little too hard. Also, they did not rise in the refrigerator overnight for me, but they rose the next morning when I took them out, and rose even more when they began baking. I will definitely make these again, they disappeared!

Classic Spanish Sangria

I made this sangria with the blackberry merlot, only one cup of spiced rum, and I made each serving with three parts sangria, one part lemon lime soda. Excellent, and not too terribly strong this way. I plan to make this several times a year!

Fancy Brownies

After my best friend served us these last weekend, I made these for my Moms group, following the ingredients as written. They were raved about, and I brought home an empty container! My husband and kids gobbled them up, too. Rich and satisfying, my favorite brownie recipe so far!
