Kitty Litter Cake

I made this for a Halloween party one year, and NO ONE WANTED TO EAT IT. It looked that authentic, I guess :) But I ate it, and persuaded some others, and it was excellent. I used a throwaway foil broiler pan so as not to have to buy an actual cat box (though the simplest kind isn't that expensive) and lined it with a small white trashbag to look like a litter liner. It looked great and I reverted to about 11 years old while I was shaping the tootsie rolls. And, hilarious visual aside, it tasted great.

Pumpkin Flax Quickbread

Very yummy. Only modifications I made were to add raisins and sprinkle flax seeds on the top. I think the next time around I'll use Splenda baking mix, as another reviewer mentioned, to cut the sugar content a little. Fairly easy, too, as breads go.

Mombasa Pumpkin Dessert

Excellent for a chilly day, love the pumpkin with the cardamom, but could do with a lot less sugar - I have a serious sweet tooth and it was still too much for me. You could probably substitute mostly splenda & use less real sugar and not hurt the taste much. I added more pumpkin & coconut milk while cooking to try & offset the sugar a bit, and it was still overwhelming.

Vegetable Quiche Cups to Go

A lot of people have mentioned that they used less spinach, and added some other things - I DEFINITELY recommend doing so! I made these exactly as the recipe suggested and froze them to have for breakfast on my first week of South Beach. By the end of the week, I couldn't eat any more - they were like big wet piles of spinach w/a little bit of egg/peppers here and there. NASTY. Even if you're using egg substitute, I think this recipe would be much improved by using 2 or 3x the amount of egg product and about half the spinach - unless you are a huge fan of soggy spinach!!
