Chicken With A Bang

I diced up the jalapenos, and ended up not making the sauce (ran out of time). The chicken/pepper/cheese/bacon combination was WONDERFUL! My husband and I both loved it. This is a new family favorite for sure! Edit: My hubby and I still love this recipe, but I've made some modifications so it's quicker to make. I've still not made the sauce because the chicken by itself is so good. What I do now is dice the chicken and cook in a pan with a little bit of oil. Then I sprinkle on cooked crumbled bacon, the chopped jalapenos (I use jarred), and the shredded cheese. Put the lid on and let it cook till the cheese melts. It takes a fraction of the time but still tastes delicious!

Best Big, Fat, Chewy Chocolate Chip Cookie

Amazing cookie recipe! Full of chocolate chips (I did half regular half mini) and a great taste. I like these more than the "award winning" recipe as those had a fake chemical taste. I made smaller cookies and baked for about 12 minutes and they came out perfect. DELICIOUS!

Banana Sour Cream Bread

Great recipe! I halved the recipe, but only had one loaf pan, so I made that and a 8x8 "loaf". Both were delicious! I brought it to work and it was gone in less then 10 minutes (with 4 people eating it!) I'll be making this one again for sure!

Chicken Fried Chicken

We loved this recipe! I didn't have crackers, so I used 1/2 cup panko breadcrumbs with the rest of the ingredients. I did follow other reviewers and breaded the chicken with flour, then egg, then the crumb mixture.

Banana Cake VI

Great cake and AMAZING frosting! I followed the recipe exactly except for the lemon juice (I didn't have), and I only used 3 cups of sugar in the frosting. It did take 80 minutes to cook, but I put it in the freezer when done, just like the instructions said, and it came out nice and moist. This is more dense than a normal cake (but not as dense as banana bread). The frosting is what makes it though - GREAT cream cheese frosting! Hubby took this to work and people were raving about it. A winner for sure!

Charley's Slow Cooker Mexican Style Meat

My husband and I love this stuff! We use Franks hot sauce and it comes out great each time. I'm lazy and don't brown the meat, so I don't use the oil. I just throw the rest of the ingredients into the crockpot and let it go. My mom loves to take the leftover juice and turn it into a soup base.

I read a bunch of the popular reviews and went with what they said. My changes: used butter instead of shortening, made the dough in the food processor, and lightly rolled/kneaded it with a bunch more flour (since the dough was quite sticky). I got 10 biscuits and they're delicious! I'll be using this recipe from now on, it's so easy and quick!

Easy Key Lime Pie I

This is one of the easiest recipes I've ever made! It was made even easier by finding key lime juice in one of the lime/lemon juice containers at the store. DH (a key lime pie snob) loved the filling.

Broiled Tilapia Parmesan

Yet another 5 star review! I'm not much of a fish person (fish sticks are more my speed), but this was WONDERFUL! I did cut the butter and mayo in half to save some calories and it still tasted divine.

Guacamole

Great guacamole recipe! I did leave out the cilantro (not a fan) and didn't have tomatoes on hand, but this was WONDERFUL! I'm not too much of a guacamole person but I really liked it, and my mom and hubby (who are huge guacamole fans) thought it was great.

Irresistible Pecan Pie

I make this pecan pie every year, and it gets rave reviews. I'll never make a different recipe again! This pie is FULL of pecans and not all that brown "goop" that most pecan pies are full of. If you love pecans, you'll love this pie! My only changes are that I use 3 cups of pecans, half chopped, and half pecan halves, and I add a teaspoon of vanilla like the other reviews. I also use store-bought refrigerated pie crust to save on time and labor.

Libby's® Famous Pumpkin Pie

This is the only pumpkin pie recipe I use! I do use 50% more spices just to add to the flavor. I also add a tablespoon molasses, just because my mom always does that. :) Oh, and if I'm cutting calories, I make it crustless. Just spray the pie pan with Pam and bake according to directions. It works GREAT!

Beef and Irish Stout Stew

Made this for dinner last night and it was great! I had some minor changes (didn't brown the meat, so I didn't use the oil or flour), used 1/2 tsp each salt and pepper, and a heavy dash of cayenne. Also used about 3 TB tomato paste, 1 cup Guinness, and 1 cup beef stock, and dried thyme. I wasn't sure about the smell while cooking in the crockpot (it wasn't bad, but wasn't good either), but I served it on mashed potatoes with Irish soda bread (also from this site), and it was a HUGE hit! Because I used more liquid, I had a lot of gravy which I thickened with cornstarch. DELICIOUS!

Cinnamon Rolls III

Amazing! I followed the popular reviews and used the whole package of pudding mix (which means I needed a bit more water in the dough). I also left out the nuts, but followed the rest of the recipe as described. They were delicious! I've made this recipe three times so far (once was an orange version), and all three were a hit.

Layered Chicken and Black Bean Enchilada Casserole

Excellent recipe! Hubby and I loved it! I did leave the sour cream out but put it on top when it was done cooking. I also used cumin and chili powder on the chicken instead of the other spices.

Sarah's Applesauce

AMAZING! I've never had homemade applesauce, and I won't be going back to the store bought. I made a triple batch and used 12 apples - 6 fuji, 3 granny smith, and 3 brayburn. I used the apples, 1/2 cup water and 2 teaspoons of cinnamon. No sugar. I cooked them in the crockpot for 4 hours on high. A slight mash with a potato masher and they were perfect. A word of warning: don't try this warm! I had my first taste when the applesauce was still warm and it was kinda nasty. I was really disappointed until I tried the cold applesauce the next day. HUGE difference! I'm on my third triple batch in three weeks, and I'm going to make two more batches this weekend and freeze it all.

Light Oat Bread

I made this up last night and it was a HUGE hit! Hubby and I ate almost the whole loaf for dinner. :) It was great hot and fresh with butter but makes really good toast too. I loved the slightly crispy but not very chewy crust. The oats do just "melt" into the bread and you don't even notice them. I'll be making this again for sure!

Roasted Cajun Potatoes

Great recipe! I forgot to make these with dinner, so I made them right before going to bed. Neither of us were in the mood for them, but they were so good we couldn't stay away. I'm adding this to my recipe box! I did end up following other reviewers and reduced the amount of oil, didn’t use shallots, and doubled the garlic.
