Sarah's Applesauce

AMAZING! I've never had homemade applesauce, and I won't be going back to the store bought. I made a triple batch and used 12 apples - 6 fuji, 3 granny smith, and 3 brayburn. I used the apples, 1/2 cup water and 2 teaspoons of cinnamon. No sugar. I cooked them in the crockpot for 4 hours on high. A slight mash with a potato masher and they were perfect. A word of warning: don't try this warm! I had my first taste when the applesauce was still warm and it was kinda nasty. I was really disappointed until I tried the cold applesauce the next day. HUGE difference! I'm on my third triple batch in three weeks, and I'm going to make two more batches this weekend and freeze it all.

Chicken With A Bang

I diced up the jalapenos, and ended up not making the sauce (ran out of time). The chicken/pepper/cheese/bacon combination was WONDERFUL! My husband and I both loved it. This is a new family favorite for sure! Edit: My hubby and I still love this recipe, but I've made some modifications so it's quicker to make. I've still not made the sauce because the chicken by itself is so good. What I do now is dice the chicken and cook in a pan with a little bit of oil. Then I sprinkle on cooked crumbled bacon, the chopped jalapenos (I use jarred), and the shredded cheese. Put the lid on and let it cook till the cheese melts. It takes a fraction of the time but still tastes delicious!

Amazingly Easy Irish Soda Bread

Super easy bread to make. I wasn't sure about it while doing the kneading (it seemed too dry and too moist at the same time), but I went ahead with it and it turned out really good. The buttermilk/butter mixture on the crust is amazing and gives the crust great crunch and flavor. I brushed it on twice (once before baking and once in the middle of baking), and I'll make sure to do that part again when I make this recipe again. Like a previous reviewer said, this makes good toast the next morning! I served this with a Guinness beef stew recipe (from this site) that was served over mashed potatoes, and the whole meal was a big hit.

Cinnamon Rolls III

Amazing! I followed the popular reviews and used the whole package of pudding mix (which means I needed a bit more water in the dough). I also left out the nuts, but followed the rest of the recipe as described. They were delicious! I've made this recipe three times so far (once was an orange version), and all three were a hit.

Beef and Irish Stout Stew

Made this for dinner last night and it was great! I had some minor changes (didn't brown the meat, so I didn't use the oil or flour), used 1/2 tsp each salt and pepper, and a heavy dash of cayenne. Also used about 3 TB tomato paste, 1 cup Guinness, and 1 cup beef stock, and dried thyme. I wasn't sure about the smell while cooking in the crockpot (it wasn't bad, but wasn't good either), but I served it on mashed potatoes with Irish soda bread (also from this site), and it was a HUGE hit! Because I used more liquid, I had a lot of gravy which I thickened with cornstarch. DELICIOUS!

Charley's Slow Cooker Mexican Style Meat

My husband and I love this stuff! We use Franks hot sauce and it comes out great each time. I'm lazy and don't brown the meat, so I don't use the oil. I just throw the rest of the ingredients into the crockpot and let it go. My mom loves to take the leftover juice and turn it into a soup base.

Banana Cake VI

Great cake and AMAZING frosting! I followed the recipe exactly except for the lemon juice (I didn't have), and I only used 3 cups of sugar in the frosting. It did take 80 minutes to cook, but I put it in the freezer when done, just like the instructions said, and it came out nice and moist. This is more dense than a normal cake (but not as dense as banana bread). The frosting is what makes it though - GREAT cream cheese frosting! Hubby took this to work and people were raving about it. A winner for sure!

Libby's® Famous Pumpkin Pie

This is the only pumpkin pie recipe I use! I do use 50% more spices just to add to the flavor. I also add a tablespoon molasses, just because my mom always does that. :) Oh, and if I'm cutting calories, I make it crustless. Just spray the pie pan with Pam and bake according to directions. It works GREAT!

Irresistible Pecan Pie

I make this pecan pie every year, and it gets rave reviews. I'll never make a different recipe again! This pie is FULL of pecans and not all that brown "goop" that most pecan pies are full of. If you love pecans, you'll love this pie! My only changes are that I use 3 cups of pecans, half chopped, and half pecan halves, and I add a teaspoon of vanilla like the other reviews. I also use store-bought refrigerated pie crust to save on time and labor.

Candy Bar Fudge

Excellent! My coworkers have LOVED them! I think my boss has had about half of the recipe so far. :) I did use the tip of microwaving the peanuts/caramel after mixing the peanuts in, and it did make it a lot easier to spread.

Chicken Nuggets

I thought there was slightly too much paprika flavor, so I would halve that the next time I make it. I also ran out of the butter and bread crumb mixture, so I would use more. Overall though, it was good and I would make it again! It looks super easy to adapt the flavors for other spices/herbs.

Crumpets

Amazing! We've made this twice, the first time we didn't have a griddle, so we cooked them in a pan on medium heat. I read the recipe wrong and accidently used all the butter in the batter, and they still came out just fine. The second time we used a griddle and cooked them at 300 degrees, but I think that was a bit too low, I would do 325 or 350 next time. These are GREAT with butter and raspberry jam!

Refried Beans Without the Refry

Delicious! I used the whole jalapeno as we like things kind of spicy. I also used my immersion blender to mix the beans and it worked perfectly. We had bean burritos for dinner that night and I froze the rest for later meals. I LOVE this recipe!

Chicken Fried Chicken

We loved this recipe! I didn't have crackers, so I used 1/2 cup panko breadcrumbs with the rest of the ingredients. I did follow other reviewers and breaded the chicken with flour, then egg, then the crumb mixture.

Cod with Italian Crumb Topping

Hubby and I both love this recipe. We use tilapia instead of cod and I don't do the egg white as the crumbs stick to the damp fish just fine. My other changes: double the topping as more is better. I also double the oil as one teaspoon just doesn't seem like enough. The crumb topping is great with other side dishes like green beans, broccoli, cous cous, rice, etc. This is one of our monthly staple recipes!

Guacamole

Great guacamole recipe! I did leave out the cilantro (not a fan) and didn't have tomatoes on hand, but this was WONDERFUL! I'm not too much of a guacamole person but I really liked it, and my mom and hubby (who are huge guacamole fans) thought it was great.

Layered Chicken and Black Bean Enchilada Casserole

Excellent recipe! Hubby and I loved it! I did leave the sour cream out but put it on top when it was done cooking. I also used cumin and chili powder on the chicken instead of the other spices.

Brooke's Best Bombshell Brownies

I LOVE these brownies! I follow the recipe as written and they're great. I also sometimes omit the chocolate chips and instead smush peanut butter cups or York peppermint patties down into the top of the batter. DH loves the PB cup ones, but they're both a huge hit at work.
