Vegetarian Meatloaf with Vegetables

I really, really liked this meatloaf. I did read some of the other suggestions/reviews and used a few of the changes. I used the ketchup mixture instead of tomato sauce and I used a 10oz package of stuffing mix, mostly consisted of bread crumbs. I would make it the same way again. Delicious thank you Renee! Although the only other change I would make next time is that I would not cook the veggies with it. They came out dry and not to my liking. I'd rather make mashed potatoes and steamed veggies as the sides. Thank you!

Spinach Enchiladas

I love the enchiladas de espinaca at the local mexican restaurant and tried to copy them at home. To add color and flavor use tomatoes, add them part way through cooking the garlic and onions. I use cottage cheese instead of ricotta (I like the texture and flavor better) as well as fresh spinach that I steam. I use cheddar to top it off and sour cream when serving.

Broccoli and Stuffing Casserole

I like the use of broccoli in this dish. We love broccoli and this is a new use for us. This is much like green bean casserole you have at thanksgiving. Although I prefer sour cream to the mayo and I sometimes add the crispy onions for a crunchy topping.

Vegetarian Burrito Casserole

This is a great casserole. Our friends, veggies and carnivores, both like this one. I made a couple of changes of my own to it. I added more veggies, such as corn, peppers, and onions. I also used corn tortillas instead of flour out of personal preference. Delicious, thank you!
