Chocolate-Zucchini Cupcakes

These were fantastic! So moist and flavorful. I did double the chocolate and added about 1/4 cup of dutch processes cocoa (chocoholic here). I only put half the oil in, also. Will definitely make these again.

Mom's Zucchini Bread

Very moist and delicious. My kids devoured every crumb and so did I. I pureed the zucchini so no one would know it was zucchini bread. I also added chocolate chips. Who doesn't like chocolate.

Veggie Pizza

This was just ok. Won't make it again. I think the only thing redeemable about it was the crust. Maybe omit the sour cream and dill and sub with mayo and add some bacon?

Baked Pork Spring Rolls

My family really enjoyed these. I didn't have any oyster sauce, nor was I going to buy any and they still turned out pretty good. I made up some sweet n sour sauce for dipping.

Traditional Macaroni and Cheese

This was pretty good. It made tons of sauce compared to the pasta, so I just cooked up more pasta. I think maybe some sour cream in this would be good to try.

French Bread

Wow, this was super easy and very delicious. I used my Kitchenaid, raising the dough twice. So it took about 1.5 hours, but turned out perfectly. Just as good as the french bread I made for V day that took 7 hours!

Caldo de Res (Mexican Beef Soup)

This was sort of a "potpourri" soup. Some of this and some of that. Loved all the veggies. I cut the recipe in half and it still made enough for 8 so I'm putting some in freezer for later.

We all enjoyed this. I used Cool Whip instead of whipping cream and I thought it would end up too sweet. But, it was just right with a bit of tartness.

Strawberry Oatmeal Breakfast Smoothie

Easy and delicious. Kids enjoyed it for an after school snack. Put in about a large TB of oj concentrate for fruitier flavor. I put oats in magic bullet. This would be really good with almond milk. I will make this again!

Cannellini Bean with Flat Leaf Kale

I rec'd a bunch of kale in my Bountiful Basket and didn't really know what to do with it until I came across this recipe. It was simple, healthy, and flavorful. I also added in some chopped carrots that came in my basket. I would make this again.

Carrot Cake III

I was very disappointed with this recipe. I was right to hesitate using so much rising agent because the cake completely caved-in in the center. It ended up being really greasy (I knew it called for too much oil) and too sweet (I also thought it called for too much sugar. I don't know why it rec'd so many 5-star reviews? In the end I should have stuck with good old Betty Crocker.

Fifteen Minute Chicken Chili

This was pretty good, too spicy tho. I cut the chili powder and cumin in half but it was still too spicy for me and the kids. I added a few TB of brown sugar for a bit of sweetness.

Chocolate Cheesecake II

This was really good. Very rich, only need small slice to get my chocolate fix. I used Oreos for the crust cuz that's what I had on hand, also substituted tofu for one pkg of cream cheese.

I am in love! This was really easy and fast. I used sugar-free semi sweet chocolate chips as well as using Splenda in the whipping cream. This mousse is my new favorite!!!

Canned Apple Pie Filling

I wasn't very happy with this recipe. So many people gave rave reviews. I started with 6# of gala apples but only got 3.5 quarts of pie filling. It also tasted too salty to me and not enough cinnamon. I had about 1.5 cups of leftover syrup. Thank goodness I had an additional 42 lbs of apples on hand. I ended up needing over 12 lbs of apples for this recipe. I think the original submitter meant 6 quarts and not lbs. And I think there needs to be 1 inch of head space instead of 1/2 inch because the filling started oozing out all over the place. Anyways, I have lots of apples left for tomorrow's canning. But I will make some modifications to the recipe.

Banana Bran Zucchini Bread

These were moist and very flavorful. I used All-Bran, wheat germ, and flax meal. I had to add a little bit milk b/c that made it a bit thick. I put some chopped nuts on top. This was a perfect recipe to help me use up a lot of my zucchini and that banana that has been on the counter for a while. Great for breakfast or a healthy snack. These are really good for you!

Mary Wynne's Crabapple Jelly

I give up, I've tried this recipe twice now and I cannot get it to gel. I got the temp up to 224, but no gel. I even did one batch with Suregel pectin and no dice. The flavor was good, but man that was a lot of work. 5+ hours from the time I picked the apples to pulling them out of my canner. I now have 7 jars of "syrup".
