Slow-Cooker Chicken Tortilla Soup

This is a easy soup recipe with great favors. Anytime my husband says, "this is really good", I give 5 stars. Not only is the soup a beautiful color with the enchilada sauce added but all the ingredients compliment each other perfectly. (I added a picture that proves it's beautiful color.) Even though this is a slow cooker recipe, I decided on this recipe last minute and made it up in a flash. Even without this stewing in the crock pot for hours there was no disappointment. Note: the corn tortilla strips also turned out yummy. I used coconut oil instead of vegetable oil just because that is my oil of choice. Don't skip out on making these! They just add something special and even stay fairly crunchy in the soup.

Szechwan Shrimp

I used this recipe specifically for the sauce. Rather than shrimp, I wanted to make Szechwan Chicken. Other than the meat substitution, I doubled the recipe for more sauce and doubled the red pepper flakes for our 'hot' preference. I also added fresh spinach leaves at the very end to add to our vegetable intake. With all that said, even though I made these substitutions I don't feel it really changed the overall wonderful flavor of this dish, it's all in the sauce, after all. I served over brown rice. This is a keeper with many possibilities, just maintain the integrity of the sauce. It's perfect!

Mediterranean Potato Salad

This was an easy recipe with nice favors. My store had no fresh basil so I had to use dry. I know it would be much better with fresh basil. I added salt and only half the green onion (husband's ongoing request with any recipe). I will fix this again.

Chantal's New York Cheesecake

If you are looking for a New York style cheesecake, look no further than this recipe. It's thick, creamy and downright delicious. I followed the recipe exactly. I did get a few cracks around the edges but I could tell, as it was cooking, that it was sticking to the sides as it was rising. I will make sure to grease the sides more thoroughly next time. Tangy Slow Cooker Pork Roast

This is an easy main dish with a good flavor. The first time I made this I kept to the recipe even though I was skeptical about the sugar. It did end up too sweet for our liking. The second time I only added a tablespoon of the sugar and it ended up much better for us.

Alfredo Sauce

Cooked as directed except I had about a third less Parmesan than was called for; however, it was still wonderful. Served as a chicken Alfredo over fettuccini noodles...and the crowd roared. ;-)

Iced Pumpkin Cookies

Sub'd coconut oil for butter, slightly reduced sugar and added just a quarter cup mini choco chips. Also added cream cheese frosting. So delish! Hubby loved.

Cajun Chicken Pasta

Simple, easy and super yummy. I prepared everything per the recipe and would only add a bit more cajun spices next time. I could see swutching up the veggies for variances or conveience to what you may have on hand.

Orzo with Chicken and Artichokes

I prepared as written except only used 1/2 of the orzo, added sea salt and I used pork loin (we were snowed in and without chicken). Husband liked and said he would definitely like to have it again sometime.
