My favorite things to cook
I'll start with my favorite season to cook... fresh garden season. I love a beautiful balance of color on my plate and I prefer grilling my meats. My favorite things to cook, then, are grilled meats with heapings of fresh garden delights.
My favorite family cooking traditions
Thanksgiving brings everyone around the table. I enjoy cooking Thanksgiving dinner and I keep it basic and traditional, no conglomeration of casseroles and difficult food. I prepare a basic non stuffed turkey, fresh vegetables of green beans, corn, mashed potatoes. Dressing, gravy, fresh cranberry sauce and bread add to the basics of this meal. Dessert is just as simple, pumpkin and apple pie. To me, these foods just go together well. It's Easy, basic and the everyone enjoys it leaving the table satisfied rather than sick from too many mixtures of flavors.
My cooking triumphs
A created a healthy cookie from scratch on a whim. A little this and a little of that. They were a success and my fellow co-workers raved over them. Unfortunately, I didn't right anything down and I have no idea how I made this yummy healthy cookies. Hmmm, was that a triumph or not. Dang, what was in that recipe!
My cooking tragedies
I can't make a grilled cheese sandwich to save my life! I burn it every time!

Slow-Cooker Chicken Tortilla Soup
This is a easy soup recipe with great favors. Anytime my husband says, "this is really good", I give 5 stars. Not only is the soup a beautiful color with the enchilada sauce added but all the ingredients compliment each other perfectly. (I added a picture that proves it's beautiful color.) Even though this is a slow cooker recipe, I decided on this recipe last minute and made it up in a flash. Even without this stewing in the crock pot for hours there was no disappointment. Note: the corn tortilla strips also turned out yummy. I used coconut oil instead of vegetable oil just because that is my oil of choice. Don't skip out on making these! They just add something special and even stay fairly crunchy in the soup.

Szechwan Shrimp
I used this recipe specifically for the sauce. Rather than shrimp, I wanted to make Szechwan Chicken. Other than the meat substitution, I doubled the recipe for more sauce and doubled the red pepper flakes for our 'hot' preference. I also added fresh spinach leaves at the very end to add to our vegetable intake. With all that said, even though I made these substitutions I don't feel it really changed the overall wonderful flavor of this dish, it's all in the sauce, after all. I served over brown rice. This is a keeper with many possibilities, just maintain the integrity of the sauce. It's perfect!

Mediterranean Potato Salad
This was an easy recipe with nice favors. My store had no fresh basil so I had to use dry. I know it would be much better with fresh basil. I added salt and only half the green onion (husband's ongoing request with any recipe). I will fix this again.
