Yum! Love this recipe with the healthier alterations I made. I use melted coconut oil instead of veg oil, only ONE cup of sugar (that's where I took away one star. It calls for way more sugar than necessary), milled flaxseed mixed with water to replace eggs, and whole wheat flour instead of white all-purpose.
Just to note: the batter will slightly solidify if using coconut oil and frozen blueberries, making it a bit more challenging to get into the pans (you kinda have to press it in) but it all softens again once in the oven and turns out fine :)
