Linguine with Clam Sauce

I'm a terrible cook but this was so easy, even for me! I wanted a clam recipe because they are high in iron and I am deficient. The recipe says it takes 32 minutes, but it took me less than 20. Great simple recipe.

recipe should specify butter needs to be softened, for those of us who aren't pros. But I just popped the whole bowl of topping into the micro for 20 seconds and then I was able to mix it well. tasty!

Honey-Balsamic Vinaigrette

Is it too strong of a statement to say this dressing changed my life?! I ate only bottled thousand island dressing for many years and thought it was the only thing I'd ever like. I was sure I wouldn't like "healthy dressings" so I never bothered to make them myself because I thought it would taste bland. However, this dressing is absolutely delicious. It's probably not low fat or low calorie, but I consider it more healthy than bottled because it doesn't have the preservatives, and I know exactly what's going into it. And I'm not getting overloaded with sugar, as there's just a small amount from the honey and soy. It couldn't be simpler to make, and the recipe scales easily to a single serving. Perfection!

Peanut Butter Cup Cookies

Peanut butter perfection! These are delicious and easy to make. The recipe doesn't specify, but I used my handmixer to finish up the dough. So rich, you won't be able to eat more than 1 or 2! I am taking these to work tomorrow, my coworkers will love me!

One Bowl Brownies

This is the recipe on the box of unsweeted Baker's chocolate. It's pretty good. I eliminated the nuts because I think they ruin a good brownie. I added semi sweet chocolate chips instead.

Blueberry Bread I

This was the first bread I have ever made. It was very easy to make and the consistency was nice. I was able to use my 9X5 loaf pan. I put in 1 and a half cups of blueberries and that turned out fine too. However, like other reviewers, I found it was not sweet enough. I expected it to taste like a blueberry muffin, but it didn't. I probably wouldn't make this again, but I will try with other breads.

Filet Mignon with Rich Balsamic Glaze

This was absolutely delicious. I haven't been able to make a filet at home for a long time because it never cooks up right. I didn't think a pan cooked filet would taste right but it was great! I will make this again and again. Also recommend using the recipe "Roasted asparagus with balsalmic vinegar". We had that on the side. yum.

I've been making basically the same recipe forever. I use a beaten egg beaten with a squirt of mustard. Also I put garlic powder in the bread crumbs. yum!

Garlic Crab Legs

I haven't made this, but I'm sure it's good. A tip, use beer instead of water when you steam crab legs. It's much tastier! I recommend using 1 can of Boddington's Ale.

Flourless Peanut Butter Cookies

Honestly I thought these were horrible. The cooking time was not long enough so they were not done in the middle, and it really didn't taste like a cookie. It just tastes like a hunk of peanut butter and sugar. Even my husband hated them and he loves peanut butter. Will not make these again.

Easy Guacamole

Yum! This was great! If this is your first time using avocado, be aware that they should be slightly mushy when ripe. I did't know that at first and bought hard avocados which I was not able to mash up! The second time though, it was tasty! I will make this again.
