Santa Fe Apple Pumpkin Soup

I first had this at a friends house and couldn't get enough of it! It has become a staple in my rotation. Easy to prepare, tasty, a when served with a hearty bread, very filling. I now make it with fat free evaporated milk instead of the heavy cream and it's still wonderful.

Chicken Cilantro

I love the flavor of cilantro so this dish was perfect. In fact, I have been searching for a version of Peruvian "arroz con pollo" and I'd say this would be it. The hominy adds a nice textural element. Next time I'd like to try browning my chicken separately from the onions, and trying thigh pieces instead. Otherwise, I wouldn't change much. Thank you!

Butter Mochi Cake

Quite good. Quite authentic. My first attempt turned out a bit on the dry side, but I think it's due to my inexperience with cooking at altitude. The flavors were good. I will try it again, adjusting for altitude.

Famous Japanese Restaurant-Style Salad Dressing

I always prefer homemade dressings to store bought. This was great! I also used less ketchup (1 T) and found the taste to be just like my favorite Japanese restaurant's dressing. YUM!

Fennel in Wine and Honey

The wine and honey balances out the licorice taste of the fennel. It's a great recipe. I scaled it down ONE fennel bulb for 2 people, used cooking sherry instead, and it was perfect.

Oatmeal Banana Nut Bread

I could tell this was going to be delicious when I cut into it; it was so fragrant. The nose knows! Only made small changes: --increased bananas by 1/2 cup, because I had so many over-ripe bananas. --added cardamom-1/4 t, cinnamon 1/2 t, and ground mustard, pinch. --decreased salt by 1/4 t. This is the 3rd BB recipe I've tried here recently. One was too dry, the other was too mushy, this one was just right.

Dried Cherries, Pecans and Rosemary Brie en Croute

added maple syrup about 1/2 cup, would adjust that amount to 1/3. This recipe is perfect for an appetizer that looks complicated but it's not.

Best Ever Banana Bread

Added ground cardamom, cinnamon, and ground ginger because I couldn't resist. Substituted with homemade " buttermilk" and reduced sugar using 1/2 cup brown sugar and 1/2 cup white sugar. Pecans instead of walnuts. This is my keeper recipe for sure !

Sweet Potato Corn Bread

Used 2 cups baked sweet potato ( yams) because that's what I ended up with.... Also used 1/2 cup honey instead of sugar.... Yum!

Crispy Edamame

Used the toss method to coat the beans. It's more chewy than crunchy, but I love it. Used a 4 cheese blend because that's what I had. I could eat these every day. Will try stirring midway through to increase crunchy texture, but love it the way it is too.

I agree with another rater, why cook mango? If it is ripe it will peel easily. I didn't like the honey flavor with this.

Disclaimer: I think I might have messed up. The flavor was overwhelming, way too much chili powder. I think it would have been better if the spices were reduced. and I had fewer margaritas. I'll try it again and review my review.

I've never made this before, but it sounded like my kind of recipe, so I have no baseline. The meat had good flavor and texture. It was perfect on some baguette. Reminds me of the pate in Vietnamese Banh Mi.
