Shrimp and Asparagus

Loved how versatile this recipe is. Everyone has their own ideas; I used what else I had on hand. I used 1/4 c. butter, 1/4 c. olive oil; sauteed 3/4 c. green onions, 3 T. minced garlic, a red bell pepper sliced thinly, 1 T. finely minced basil, 1/8 tsp. oregano, 1/4 tsp. crushed red pepper til tender, added the shrimp. Tossed around a very few minutes then added 1/2 dry sherry w/1T.cornstarch. I added the salt, black pepper and tossed the spaghetti in with the Parmesan cheese. This was really great!

Chocolate Lizzie Cake with Caramel Filling

This was delicious but the texture was not quite right. I think that if cooked to the soft ball stage it may have a better chance of sucess. I used it with a yellow butter recipe cake mix, it was good with chocolate icecream but it would have been better with chocolate cake too.

Barlow's Blackened Catfish

This is my first try at blackened anything. I had a bad experience years ago when it first became popular but I had a taste of my niece's at a restaurant lately and have been wanting to have more ever since. I used Zatarins Blackened Seasoning and added the garlic powder. I also used the fresh lemon juice. I used a combo of olive oil and butter to sear the fillets and didn't use the salad dressing at all. It made a delicious sauce as it baked and it only needed 15 minutes to bake. They were almost done after the hot searing. I served it over plain rice with steamed carrots on the side. My husband who is picky about seafood loved it. Thanks a lot for the recipe.

Garlicky Beet Delight

We "used to have" beets with onions all the time UNTIL this recipe. It is so outrageously delicious with fresh beets warm or cold.

Super-Delicious Zuppa Toscana

I made this pretty much as described except used evaporated milk. I triple batched it cause my son came home from college and got together with his friends. We had this all week-end. No-one got tired of it. I shared with friends and they said it does taste just like "you know what Italian Chain".

Dee's Mexican Rice

I love how everyone changes it up some and it works, you never get bored with it. I've had this recipe for about a year and make it often with what ingredients I happen to have. Today I used Poblano peppers and salsa. It's the browned spices that makes this dish great!
