Cinnamon Cranraisin Bread

Followed exactly in my bread machine. Used mixed dried berries instead of just cranberries. Turned into a hard lump of something in the corner of the machine. Brand new yeast, new bag of berries. What a waste.

Slow Cooker Pot Roast

I love this easy recipe, it's been around forever. But, I add tons and tons of veggies. Potatoes, carrots, onions, mushrooms, tomatoes, red bell peppers and fresh herbs. I think that helps to cut the salt issue some have with the just meat and packet version. I can't imagine a pot roast without veggies. I would never add additional salt! Wait until it is done and season then if necessary. I'll be making a yummy Cottage pie with the leftovers.

Lightning Gravy

I gave this a three only because I made modifications. I used low salt chicken broth because it had to cook way longer than 2 minutes on the stove top to get it reduced and thickened to a good gravy consistency - mine reduced by almost half before it got nice and thick. Also added garlic, onion, pepper and a little oregano.

Crustless Spinach Quiche

Great starter recipe. I love the fact that it is crustless. I use 16 oz of Egg Beaters, whatever cheese we have on hand (although I have never used 3 cups!) and sometimes add meat or not. It's great with sun dried tomatoes and roasted red bell peppers, heck whatever veggies you have on hand.

Crispy Oven-Fried Fish Fillets

I used Catfish fillets and cut them in half. NO WAY they were cooked in 10 minutes. Pulled them out, put right back in for another 8 minutes. Taste was good, instruction off if you have anything but a super thin cut of fish.

Shrimp Tacos

I should have trusted my instincts. Honey and shrimp? Not good. The salsa was good, but the shrimp were strangly sweet and smelled odd. And practically a clove of garlic per serving might have been too much. It's a pass on this one.

Marinated Grilled Shrimp

These were great, kids even loved them. I would reduce the tomato sauce and or increase the vinegar next time. Just a tad too sweet for my taste, but the family loved them. Don't be afraid of the cayenne.... just a hint of heat. Good recipe!

Gravy Baked Pork Chops

This is a super easy recipe and doesn't require any special ingredients. I had two 2-inch thick chops and I made a couple of changes based on previous reviews. I seasoned chops with salt, pepper, garlic and onion and we seared them on the grill. My gravy was 1 can condensed cream of chicken soup, 2 fresh bay leaves, 1 tbsp worchestershire, 1 can milk, 2 tbsp dijon mustard and one crushed garlic clove. I baked at 300f for 1.5 hours covered and 30 minutes uncovered. Fabulous! Thanks for the easy recipe!

Cheesy Ham and Hash Brown Casserole

I was looking for a recipe to use up some ingredients I had on hand. I used a 24 oz package of frozen cubed potatoes so I had to make some adjustments. I used 1 can of potato soup, 1 cup of sour cream and about 1 1/2 cups of shredded cheddar. Reading a previous review, I thawed and browned my taters a little before putting it all together. I added onion and garlic too. I used about 2 cups of cubed ham instead of dicing it. I love to find recipes that I can use like this - adjusting to what I have in the cubbard. Simple, easy and tasty! Thanks! The whole family loved it!

Easy Spiced Brown Rice With Corn

Good basic recipe. I used garlic spiced chicken broth, added peas and corn and a can of fire roasted tomatoes. Because of the extra liquid, I used 1/4 cup more of the rice. Cumin, oregano, onion and pepper. Nice side dish.

Sloppy Joes II

Great recipe! I added 1 tbsp worchestershire sauce and reduced the sugar to just 1/2 tbsp white sugar. Great and easy! Kids ate it with onions and bell pepper because I diced them very small and they couldn't see them!

Eggplant Tomato Bake

I had a small to medium sized eggplant and was looking for ideas. This was it! I peeled the eggplant to get the kids to eat it. I would like to try it with the peel on. I sprayed the eggplant pieces with a little olive oil and used dried basil and salt and pepper(can't wait to try with a fresh basil leaf). I topped each eggplant with a bit of parmesan, placed tomato slice on top with a little bit of salt and baked for 15 minutes. I then put on a thin slice of fresh mozzarella and put under the broiler to toast. It was fantastic! At first I told the kids it was potatoes and they loved it! Then they asked what was the green part, so confessed. A definate addition to the family table.

Turtle Cake I

I make this for friends at work and it is always a hit. I also cut the butter to 1/2 cup. I have made it with walnuts and pecans and both turn out well. Once I added some Heath toffee pieces and that was a hit too. I dust the top with a little powdered sugar to put a finished look on it.

Absolutely Fabulous Greek/House Dressing

Fabulous dressing! Very vinegary, but I like that. I used it on the Greek Couscous Salad for a crowd from this site. I scaled it down to 15 and it made alot.
