Mango Salsa

Awesome!!!! I added some pineapple tidbits (about the same amount of mango pieces) and about 1.5 tablespoon of the juice from the can, but kept everything else the same. I think the sugar from the pineapple juice helped combat the spicy from the jalapeño (got a super hot one) and helped mellow the cilantro.

Creamy Chicken and Wild Rice Soup

This was awesome! I sautéed cut up chicken breasts in olive oil, added onion, carrots, celery, and garlic - then added about 6 cups water and concentrated chicken broth - added rice, let it all simmer for about 30 minutes - I didn't do the whole roux, add cream and simmer step, I just melted 1/4 cup butter and added 1/4 cup flour, stirred till smooth and added the seasoning packet from the rice - dumped it in the boiling pot, and it thickened up great! I added cream, but really only about 1/3 cup, didn't measure just dumped in what I had left in the container! Turned out great, very thick and delicious! :)

Grilled Italian Zucchini

I LOVE zucchini this way, but I made changes: I cut up the zuc and let it sit in the dressing for as long as it takes for the grill to heat up (gas grill) then microwave the zuc in the dressing for a few minutes then throw on the grill for a few min, turn when the zuc gets grill marks, then top w/ grated parm and let cook for a few min longer - I like them when the perimeters become charred :)

Cindy's Pumpkin Pie

This is the only pumpkin pie recipe that I use now - the 2 most important things with this recipe are: 1. Use a good quality vanilla ice cream, I recommend Bluebell if you have it. The more artificial ingredients in the ice cream, the more it will separate. 2. Do not try to make a deep dish pie, it just isn't the same. But you can easily freeze 1/2 the batter once everything is mixed together, if you only need to make one pie at a time! If you freeze 1/2 the batter it goes back to point 1 - don't cheap out on the ice cream, it won't freeze or defrost as well.

Grilled Salmon I

This was the first time I've ever made fish and it came out great! I marinated for 5 hours, and broiled the filets. My mom used to make perfect salmon and now so can I! :)

Banana Banana Bread

this was easy, and turned out a lot better than other banana breads i've made - next time may add some vanilla to the batter - this time put the loaves into a mini loaf pan and got 8 little guys in about 1/2 hr - nuts would be good too

this is the most perfect recipie ever!!! i always get great results - sometimes, i just use white sugar instead of cinn./sug mix and make sugar cookies - have also added choc chips and it makes a large, thin, and crispy choc chip cookie - the snickdoodels are my bf's favorite though!

Delicious Peanut Butter Cookies

these are the best peanut butter cookies ever - i tried making another recipie and my cookies were hard and dry. this recipie restored my faith in my cookie making abilities! followed recipie except used about 1 cup pb and added some pb chips

Marinated Flank Steak

this was excellent, i didnt have the exact ingrediants, and kinda had to be a little creative, but the marinade came out great even with my tinkering, so I know the actual recipie must be good :) tasted very much like restaurant fajitas, next time I might add some kind of spice, like chili or cayenne just to give it a tad more kick

my boyfriends mom showed me how to make this, i usually just go with garlic, oinion, corn, and zucchini then sautee it all together till the zuc is done... i tried it with the additions, its good but i guess im a plain jane kinda girl :)

Quick Creamy Potato Soup

this is so good, i love how easy it is - made just a few changes, i chopped up bacon before cooking it, and let it cook about 1/2 way then added the oinion and a healthy spoonful of garlic and let the oinions brown, then added the potatos to the mixture and sauteed them for a few minutes... used chicken broth to cook potatos in, and used cream instead of milk

Absolutely Ultimate Potato Soup

this was very good - it does take a while, but its so worth it on a cold day - the texture was interesting, my boyfriend dubbed it Orphanage Gruel because it was almost mashed potatos with chunks, excellent but thick - used less potatos next time and it had more of a broth base - personally all the bacon and grease is a little overwhelming i think i could cut the amount of bacon in half and it would be fine

Honey Grilled Shrimp

the glaze was very good - i didnt use the skewers, i sauteed the shrimp in the sauce - i used pre cooked shrimp, but kinda forgot about them and they got kinda rubbery so if using precooked, only warm them up in the sauce - sauce was not as flavorful as i was expecting, was expecting more of a punch,might marinate them longer next time
