I made this in a blender. It took a while for the strawberries to incorporate, but it was worth the wait. A little too sweet - I will try only 1/3 c sugar next time. Straight from the blender it had a more milkshake consistency. I froze it for about 2 hours, stirring every 30 minutes, and it was perfect. It was slightly grainy before it was frozen, then I found the graininess to fade as it froze.

Lemon Raspberry White Chocolate Mousse Cake

The mousse was not runny at all. I only added about 1/3 c of cream to the white chocolate when I melted it (in the microwave instead of stove). The consistency was perfect. The raspberry filling made plenty, so I did 2 layers of raspberry and the middle layer and frosting of the mousse. Overall, pretty good, pretty easy.

Pork Roast with Sauerkraut and Kielbasa

Very good for New Year's. Roast was tender, but just a tad dry. Kielbasa was great. So easy.

Tomato-Cream Sauce for Pasta

Slow-Cooker Chicken Tortilla Soup

love this. next time I would double the chicken. I added 1/2 c. diced peppers, and would do that, even more, next time. Double the chili and cumin powders. Probably be ok to use 2 cans of diced tomatoes with green chilis instead of whole tomatoes and chilis. Maybe add some black beans. Maybe add some brown rice.
