Burgundy Pork Tenderloin

I followed the recipe, except that I added mushrooms, and I didn't make gravy at the end because a) I didn't have gravy mix and b) my husband and I enjoy "jus," so I decided to leave it as is. I found it very simple to do and tasted pretty good. Next time I will add more herbs - I think sprigs of fresh rosemary or thyme would be delicious with this, especially with the red wine, which I'll also reduce the amount of since there was so much at the end. I'll definitely be making this again - thanks for a good, simple, and quick dinner recipe!

Roasted Vegetable Lasagna

Wow. What a delicious lasagna! I just finished it now, and I am so looking forward to having leftovers! I made the recipe almost exactly as written - I only substituted a green pepper as I didn't have enough red peppers on hand. When I make this again (and I will definitely be making this again) I will try a few things. I'd like to try it with portabello mushrooms and spinach. I would also like to make my own tomato sauce - to cut down on the sodium. But that's it. Wonderful recipe. Thank you so much! My lunch the rest of the week is going to be delicious!

Honey-Peanut Butter Cookies

I loved these cookies - I used crunchy peanut butter because that is what I had at home, but other than that, I followed the recipe. And I loved them. The first taste is that of peanut butter, but then it switches to honey. Delicious cookies. I'm making more today.

Yummy Cheese Ball

I made this for my boyfriend's birthday party, and it was a big hit - I've already passed the recipe on. I made small changes as others suggested, adding cheddar cheese and garlic powder. The only negative thing I would have to say about it is that it makes ALOT! I didn't use the full amount of cream cheese or bacon, and I made 1 gigantic "ball". My friends called it a cheese football! I will definitely make it again, although only half the recipe. Thanks!

Artichoke and Tomato Chicken

Great idea! I took some other people's suggestions and changed it a bit myself. Instead of regular tomatoes, I used sundried tomatoes. I used marinated artichokes and shredded mozzarella, asiago and romano cheeses. It was delicious. Next time, though, I will only cook it for about 30 minutes. Since I didn't use the marinara sauce, the chicken was a bit dry.
