Tangy Poppy Seed Fruit Salad

Whole Wheat Beer Bread

Good, stick with you bread. I used 3 tbsp of agave instead of brown sugar & amstel light draft. This could be good sandwich bread. We had it for breakfast with honey & peanut butter on day one and with apricot preserves another day.

Quick and Easy Alfredo Sauce

Just as the name suggests, this recipe is quick, easy and with a few modifications, one of the healthiest Alfredo sauce recipes I've come across! Used only 2 tbsp of low fat butter, fat free cream cheese and low fat Parmesan. Will definitely revisit this recipe soon!

Easy, healthy & delicious! I used 1/4 cup whole wheat flour 1/2 unbleach white flour, egg beaters, skim milk & apple sauce instead of butter. Perfect weekend breakfast

So simple yet so amazing! This genius little idea is very versatile... in addition to the original turtle variety, I've made them with peanut m&m's (color coordinated to the occasion), chocolate covered fruits, and a variety of Hershey kiss flavors.

Slow Cooker Chicken Stew

Light Pesto

Delish pesto that's low fat, awesome! I subbed parmesan for romano, spinach for basil, and almonds for walnuts because that's what I had on hand... and drizzed in a couple tablespoons of olive oil. I served it over tortellini first then used the leftover in the "pesto cheesy chicken rolls" recipe on this site.

Banana Pumpkin Bread

LOVE the flavor combo of pumpkin & banana! I lightened things up but using egg beaters, baking Splenda, agave necture instead of honey, extra pumpkin puree in place of oil and replaced 2/3 of the flour with whole wheat. I've been experimenting with different pumpkin bread recipes on this site and this one is by far my fav.

Tiramisu Layer Cake

MmMmMm, this is one of my fav cakes. Even my hubby, who isn't a fan of cake, likes it. To simplify things, I create only two layers with one batter. When following the cake mix directions, I substitute coffee for water, apple sauce for oil/butter and use egg beaters... then after baking, I use a baster (the paint brush type) to brush the coffee/liqueur mixture over both layers. Splenda (the original powdery kind) replaces confectioners' sugar in the filling and frosting. This is the perfect dessert after an Italian dinner!

Oatmeal Peanut Butter Cookies III

These cookies are fabulous! As a former Girl Scout, I'm excited to find a very similar homemade replica of do-si-dos, but this version is MUCH better! I substituted in Splenda, used skim milk instead of cream and plan to forgo butter in the filling next time... it IS called peanut BUTTER, right?

Instant Rolls

Quick, easy & delicious! I only got 7 rolls, but other than that, they were perfecto. I used fat free mayo, skim milk and used only 1.5 tbsp agave instead of sugar. We ate ours with the All Day Apple Butter from this site. Keeper recipe!

Quick and Super Easy Chicken and Dumplings

Very good & very easy, got raves from Hubby too. I used the Dumplings recipe from this site and added 1/3 c. onion puree, 3 small zucchinis, and about 10 baby carrots, diced. Topped it off with a little pepper, thyme, sage, poultry season and it was perfecto. Quick, healthy comfort food, yum!

Quick, easy & tasty. I used lean ground turkey, 1 whole onion, 3 bell peppers, only 2 tbsps Splenda brown sugar and a shot of red wine leftover in the bottle. Served the yummy mixture up on low fat canned biscuits. Easy, healthy lunch or dinner.

Sloppy Joe Sandwiches

The BEST sloppy joe ever! I double the recipe and used 99% fat free ground turkey. In attempt to clean out my frig I, threw in a few extra ingredients... sauteed 1 onion, 1 orange pepper and 2 cloves garlic with the meat; mixed in 2 tbsp tomato paste & reduced the ketchup to 1/4 cup; added a splash of Merlot & beef broth instead of water then simmered everything uncovered to allow most of the extra liquid to cook out. The finished product was AMAZING!! I will never buy the canned or seasoning packet version again.

Sour Cream Biscuits

My sis made these for breakfast and they were delicious with the super (chicken) sausage gravy recipe from this site. We used fat free mayo instead of sour cream because we realized we didn't have any after half of the ingredients were together. The hubster said they tasted a lot better than they looked =) Simple, quick & healthy.

Tiny Chicken Turnovers

Love this idea for left over chicken & veggies! I followed the filling recipe as is, adding about 8 sprigs of leftover asaragus, chopped. To save timeI used dehydrated chopped onions and canned low fat crescent rolls in place of recipe's dough. I made 4 large turnovers, using two crescents for each (one on top and one on bottom). We dipped them in marinara, quick & delish!

Best Chocolate Chip Cookies

Amazing & pretty easy! The entire family gave these rave reviews on Mother's Day. I used half low fat & half regular butter, half Splenda & half regular for both of the sugars and I left out the walnuts due to a friend's nut allergy. I highly recommend this cookie recipe!
