Heavenly Angel Food Cake

I followed the recipe exactly except substituted Splenda for sugar and made mini cupcakes to dip in chocolate fondue (reduced the baking time to 10 minutes). They were a favorite as is and as a dipper! Delicious!

Amish Breakfast Casserole

Very simple to throw together and very delicious. I used half egg beaters, half real eggs. low fat cheeses and ham instead of bacon. It received rave reviews from the entire family. I WILL be revisiting this recipe soon!

Mile-High Peanut Butter-Brownie Pie

My new favorite pie! OMG this pie is amazing and very rich. I lightened it up by using only 2 tbsp canola oil & 1/3 cup no sugar added applesauce, fat free cream cheese, agave nectar instead of sugar, nixed the whipped topping & chocolate chips. YUM.

Light Pesto

Delish pesto that's low fat, awesome! I subbed parmesan for romano, spinach for basil, and almonds for walnuts because that's what I had on hand... and drizzed in a couple tablespoons of olive oil. I served it over tortellini first then used the leftover in the "pesto cheesy chicken rolls" recipe on this site.

Oatmeal Peanut Butter Cookies III

These cookies are fabulous! As a former Girl Scout, I'm excited to find a very similar homemade replica of do-si-dos, but this version is MUCH better! I substituted in Splenda, used skim milk instead of cream and plan to forgo butter in the filling next time... it IS called peanut BUTTER, right?

Slow Cooker Chicken Stew

Easy and amazing!! I used half fat free, half low fat cream cheese, fat free half & half instead of cream and substituted ginger snaps for graham crackers like others suggested. This is the start to a new Thanksgiving tradition! YUM

Spinach Quiche

I omit the butter completely and saute the veggies in a tbsp of olive oil instead. I opt for healthier substitutions: egg beaters, 2% cheddar and skim milk or fat free half & half. I've experimented with fat free feta and the herb/garlic variety. Both are delicious but the herb/garlic does add an extra level of flavor & richness. Bump up the antioxidants by adding red pepper too. I find it easier to mix everything in a bowl before filling the crust... regardless, this recipe is wonderful!

Pumpkin French Toast

Very good base recipe but needs a higher sauce to bread ratio to fully soak the bread. I make 3 servings of sauce per 4 slices of bread for my hubby & I. Used egg beaters and added a teaspoon of vanilla. Delish!

No Sugar Apple Pie

Amazing! I didn't have the concentrate so used sugar free apple sauce instead and only made a top crust, cobler style. Next time I'll probably add a tablespoon or so of agave. Hubby loved it too, mm mm good!

Cheesy Ham Cups

Delish, quick & easy! I love how the amount of ingredients can easily be altered depending on how many cups are needed... without fractions! I used smoked turkey, low fat cheddar, plain greek yogurt and 1 tsp. dried parley bEcAUSE that's what was available. VERY GOOD!

Super Sausage Gravy

I had no idea breakfast gravy was so easy! I followed the recipe exactly, using skim milk and a chicken Florentine sausage (only 9 g fat per serving). I can now carry on a family food tradition without getting grossed out by a bunch of "behind the scenes" fat. Will definitely make this again when I'm having a Southern cookin' craving!

Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

Yum, these are tasty! To make them more figure friendly & heart healthy I substituted in eggs beaters, canola oil, used only a half cup of agave instead of sugar, had fresh strawberries and blueberries in the frig so added a cup of each. As another review suggested, I added 1/4 teaspoon nutmeg as well. LOVE these muffins. Hubs had three for breakfast!

Jamie's Cranberry Spinach Salad

YUM, this salad is very delicious! I was in a rush so skipped toasting the seeds and nuts. I also replaced sugar with organic agave, artery clogging vegetable oil with olive oil and didn't have white so used red wine vinegar instead. I've added various veggie topping too, despite the salad is always equally amazing. I can see this one becoming a staple!

Roast Pumpkin and Feta Risotto

Very good! I was skeptical about the combination of ingredients but they're delish together. I used brown rice, pumpkin puree, frozen chopped spinach & didn't have feta so nixed the cheese. Easy, delicious and nutritious!
