Tangy Poppy Seed Fruit Salad

Chris' Bay Area Burger

I made these for my post July 4th BBQ and everyone LOVED them! I used fresh basil & 2 tsp. of the garlic that comes pre-minced in a jar. Delicious!

Orange Cake

Easy AND delicious. Even my husband liked it and he's not a big fan of cake. I lowered the fat & calories by using a low sugar cake mix, fat/sugar free pudding mix, olive oil instead of veggie oil, and Splenda & low-fat butter in the icing. Yum Yum! This recipe is a keeper!

Heavenly Angel Food Cake

I followed the recipe exactly except substituted Splenda for sugar and made mini cupcakes to dip in chocolate fondue (reduced the baking time to 10 minutes). They were a favorite as is and as a dipper! Delicious!

Oatmeal Date Bars

I was having a chocolate craving so added a couple handfuls of semi-sweet chocolate chips on top of the fruit & didn't have dates so used raisins instead... used Splenda for both sugars. Turned out delish and got a thumbs up from the hubby. Will definitely make this one again and will try reducing the sugar like so many others suggested.

Broiled Tilapia Parmesan

Quick, easy & delicious! I'm not a big fish fan but have made this recipe on several occasions and LOVE it every time. I leave out the butter completely, use fat free mayo, low fat parmesan and substitute garlic salt for celery salt because that's what I have on hand.

Chocolate Cavity Maker Cake

LOVE this cake. It turns out perfectly every time & I always receive rave reviews! To cut the sugar/fat I use low sugar cake mix, fat/sugar free pudding mix, fat free sour cream, and substitute apple sauce for oil. You can switch out the pudding, cake, and liqueur easily for a variety of flavors. The satiny glaze from this site tops the cake off perfectly.

Red Velvet Cake III

These were delish! I made a couple healthier substitutions... unsweetened apple sauce replaced butter, used Splenda brown sugar & flax seed instead of wheat germ (bc I didn't have the later). Will come back for this one again!

Easy Southern Biscuits

The texture & taste was more like a muffin than a biscuit but I liked that they were A LOT healthier than real biscuits (if you use fat free mayo as I did)... the sacrifices I make to keep my waistline in check! I plan to test the other biscuit recipes on this site that call for cream cheese or sour cream instead of the usual butter or shortening before coming back to this one.

Flatlander Chili

This was my first attempt at chili, very easy & tasty! I added a can of (no salt added) corn to amp up the veggie value and substituted 99% fat free ground turkey in place of ground beef to knock down the fat. I didn't have a green pepper on hand but will definitely add that next time. YumYum!

Oatmeal Peanut Butter Cookies III

These cookies are fabulous! As a former Girl Scout, I'm excited to find a very similar homemade replica of do-si-dos, but this version is MUCH better! I substituted in Splenda, used skim milk instead of cream and plan to forgo butter in the filling next time... it IS called peanut BUTTER, right?

Chocolate Oatmeal Cookies

Pretty good, although I prefer a richer chocolate flavor. My husband, who is a HUGE cookie fan, thought they tasted like gingerbread (bc of the cinnamon I'm guessing) I appreciate the low(ish) butter content (no margarine please!) and oatmeal for added fiber & protein. Per usual I substituted in Splenda brown sugar. Will probably make these again, but NOT in the midst of a chocolate craving =)

Nutty Quick Bread

LOVE this bread! I halved the recipe, making only one loaf. Used half whole wheat flour, 3/4 cup Splenda, and improvised buttermilk by adding 1 tbsp lemon juice to 1 cup skim milk. Following several other reviewer's suggestion, I prepared it toasted with peanut butter & jelly and also made egg beater and 2% cheddar breakfast sandwiches with it. I could probably eat this bread everyday! MmMm, good!

The perfect resolution to an abundance of pumpkin & blueberries! That being said, if I didn't have both sitting in the frig, I would have stuck to the basics.... probably won't revisit this recipe ONLY because I prefer the two staring individually in their own muffin.

Quick and Easy Alfredo Sauce

Just as the name suggests, this recipe is quick, easy and with a few modifications, one of the healthiest Alfredo sauce recipes I've come across! Used only 2 tbsp of low fat butter, fat free cream cheese and low fat Parmesan. Will definitely revisit this recipe soon!

Chocolate Ganache

I'm thrilled to find an amazing frosting that doesn't require butter! And its quick & easy to boot! I substituted fat free half and half for heavy cream and it worked PERFECTLY! To speed things up, I refrigerated the ganache for about 10 minutes before pouring it over Boston Cream Pie. The consistency was right on for creating beautiful dips around the edge. Thanks for the fabulous yet simple recipe!
