Mile-High Peanut Butter-Brownie Pie

My new favorite pie! OMG this pie is amazing and very rich. I lightened it up by using only 2 tbsp canola oil & 1/3 cup no sugar added applesauce, fat free cream cheese, agave nectar instead of sugar, nixed the whipped topping & chocolate chips. YUM.

Roast Pumpkin and Feta Risotto

Very good! I was skeptical about the combination of ingredients but they're delish together. I used brown rice, pumpkin puree, frozen chopped spinach & didn't have feta so nixed the cheese. Easy, delicious and nutritious!

Amish Breakfast Casserole

Very simple to throw together and very delicious. I used half egg beaters, half real eggs. low fat cheeses and ham instead of bacon. It received rave reviews from the entire family. I WILL be revisiting this recipe soon!

Slow Cooker Chicken Stew

This smelled amazing while cooking up. I added white wine instead of water and minced the onion but followed everything else exactly. Very easy to put together.

Grandmother's Buttermilk Cornbread

SO GOOD! I combined this recipe with the "corn dog muffins" recipe on this site using only 1/4 cup of butter and 1/4 applesause, eggbeaters and made buttermilk with two tablespoons lemon juice added to skim milk. GREAT cornbread recipe!

Light Pesto

Delish pesto that's low fat, awesome! I subbed parmesan for romano, spinach for basil, and almonds for walnuts because that's what I had on hand... and drizzed in a couple tablespoons of olive oil. I served it over tortellini first then used the leftover in the "pesto cheesy chicken rolls" recipe on this site.

Amazing!! Made this for my hubby's birthday and got rave reviews from the whole family. To lower the fat I used egg beaters, skim milk, fat free half & half, and halved the syrup. Also doubled the vanilla and cinnamon. Leftovers were just as delish this morning =)

Easy and amazing!! I used half fat free, half low fat cream cheese, fat free half & half instead of cream and substituted ginger snaps for graham crackers like others suggested. This is the start to a new Thanksgiving tradition! YUM

My Best Clam Chowder

Amazing!! This was my first attempt at clam chowder and it was SO easy. I made it low fat by using skim milk and only 2 tbsp butter & flour. My husband went back for 2nds, which is very rare!

Fresh Strawberry Upside Down Cake

Quick & delish! I'm not sure what purpose the marshmallows serve other than sweetening the strawberries so I'll probably skip them (& the extra calories) next time. I love the idea of tweaking the traditional upside down cake and may branch out to other berries or fruit in the future. This recipe has opened a new door for me, brilliant!

Strawberry Oatmeal Breakfast Smoothie

YUM. I used this recipe as a "guide" bc I didn't have all of the exact ingredients. Used fat free milk, substituted an orange for the banana & used agave nectar instead of sugar. Loved the idea of sneaking in oatmeal and added a tbsp of ground flax seed too. Will definitely revisit this one frequently.

Fudge Truffle Cheesecake

OMG, good! I used 16 oz. fat free and 8 oz. low fat cream cheese, fat free milk & egg beaters. Instead of using the suggested crust, I sprinkled finely chopped chocolate wafer cookies & almonds in the pan. Rich chocolatey goooooodness.

I halved the butter and nixed the almonds. The peppper was a bit too spicey/hot for my husband (who is usually tolerant of heat) and I. May try again with less pepper.
