Whole Wheat Blueberry Pancakes

Super easy & delicious! I used soy milk bc that's what was in the frig, substituted agave as the sweetener and doubled the blueberries. This will be my go to blueberry pancake recipe now, YUM!

Sour Cream Biscuits

My sis made these for breakfast and they were delicious with the super (chicken) sausage gravy recipe from this site. We used fat free mayo instead of sour cream because we realized we didn't have any after half of the ingredients were together. The hubster said they tasted a lot better than they looked =) Simple, quick & healthy.

Whole Wheat Beer Bread

Good, stick with you bread. I used 3 tbsp of agave instead of brown sugar & amstel light draft. This could be good sandwich bread. We had it for breakfast with honey & peanut butter on day one and with apricot preserves another day.

These were surprisingly amazing! I substituted egg beaters, agave for sugar & rolled oats for wheat germ bc I didn't have any of the later. Will definitely return to this recipe!

Easy, healthy & delicious! I used 1/4 cup whole wheat flour 1/2 unbleach white flour, egg beaters, skim milk & apple sauce instead of butter. Perfect weekend breakfast

Buffalo Chicken Dip

Mm mm good! I used 2/3 fat free, 1/3 low fat cream cheese, fat free ranch, and 2% sharp cheddar and baked the dip between two tortillas, al la quesadillas. Made for a snacky, bar food type dinner without the guilt.

Outrageous Chocolate Chip Cookies

This is my go-to chocolate chip cookie recipe. It's simply amazing every time! I've substituted Splenda for the sugars, used both chucky & creamy peanut butters, usually use Smart Balance butter and egg beaters to lower the fat. These cookies are always perfect.

Lemon Cake with Lemon Filling and Lemon Butter Frosting

Excellent, even though I did the lazy, low fat version. I only used the cake portion of this recipe & filled it with sugar free instant vanilla pudding mixed with a teaspoon of lemon extract. I lightened up the cake using apple sauce instead of butter, subbed in agave nectar & eggs beaters, and added one teaspoon lemon extract. Even the non-cake-fan hubby liked it =)

No Sugar Apple Pie

Amazing! I didn't have the concentrate so used sugar free apple sauce instead and only made a top crust, cobler style. Next time I'll probably add a tablespoon or so of agave. Hubby loved it too, mm mm good!

Very good. I used all fat free half & half, even in place of the heavy cream but I'm going to try it with cream next time for a smoother texture. I also subbed agava for sugar. This one's a keeper =)

So simple yet so amazing! This genius little idea is very versatile... in addition to the original turtle variety, I've made them with peanut m&m's (color coordinated to the occasion), chocolate covered fruits, and a variety of Hershey kiss flavors.

Banana Sour Cream Bread

I made these for my hubby & my dad and we all LOVED them... we even had them for dessert! I halved the recipe and made muffins so sprinkled the sugar mixture on top instead of in the pan. For a more figure friendly version I used no sugar added applesauce instead of butter, agave nectar, egg beaters, fat free sour cream & half whole wheat, half unbleached flour. THE BEST banana bread ever!

Cheesy Ham Cups

Delish, quick & easy! I love how the amount of ingredients can easily be altered depending on how many cups are needed... without fractions! I used smoked turkey, low fat cheddar, plain greek yogurt and 1 tsp. dried parley bEcAUSE that's what was available. VERY GOOD!

YUM. I used half whole wheat, half unbleached flour, soy milk, nixed the vinegar & lemon juice, substituted low fat greek yogurt for butter, Splenda & 1 tsp. lemon extract bc I that's what we had. Very delicious.

Spinach Stuffed Chicken Breast

This one got oo's & ah's from my family because it looked so fancy. It was pretty tasty too. I used frozen chopped spinach, fat free cream cheese, sharp cheddar & turkey bacon. Very simple to put together and a great make-ahead meal.
