Best Chocolate Chip Cookies

Amazing & pretty easy! The entire family gave these rave reviews on Mother's Day. I used half low fat & half regular butter, half Splenda & half regular for both of the sugars and I left out the walnuts due to a friend's nut allergy. I highly recommend this cookie recipe!

Extreme Chocolate Cake

Delish! I used 1 cup of agave instead of sugar, substituted eggbeaters and replaced oil with plain greek yogurt. I skipped the icing suggested here and alternated layers of cake with the Ghirardelli Chocolate Mousse recipe from this site. A very tasty combo!

Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

Yum, these are tasty! To make them more figure friendly & heart healthy I substituted in eggs beaters, canola oil, used only a half cup of agave instead of sugar, had fresh strawberries and blueberries in the frig so added a cup of each. As another review suggested, I added 1/4 teaspoon nutmeg as well. LOVE these muffins. Hubs had three for breakfast!

Blonde Brownies I

Very yummy, and quick to thow together. I used apple sauce and just a tablespoon of olive oil instead of butter, used half cup agave and 1/4 cup Splenda brown sugar, used egg beaters and istead od chocolate, I tried butterscotch chips. Perfect dessert, especially with a scoop of ice cream!

Lemon Pudding Cake II

Simple, tasty treat! I used only a half cup agave for sweetener, only one tablespoon butter, substituted 1 tsp lemon extract for zest, used soy milk and used egg beaters so mixed everything all at once. Turned out perfect depsite the modifications.

Sloppy Joes II

Quick, easy & tasty. I used lean ground turkey, 1 whole onion, 3 bell peppers, only 2 tbsps Splenda brown sugar and a shot of red wine leftover in the bottle. Served the yummy mixture up on low fat canned biscuits. Easy, healthy lunch or dinner.

Jamie's Cranberry Spinach Salad

YUM, this salad is very delicious! I was in a rush so skipped toasting the seeds and nuts. I also replaced sugar with organic agave, artery clogging vegetable oil with olive oil and didn't have white so used red wine vinegar instead. I've added various veggie topping too, despite the salad is always equally amazing. I can see this one becoming a staple!

Tiny Chicken Turnovers

Love this idea for left over chicken & veggies! I followed the filling recipe as is, adding about 8 sprigs of leftover asaragus, chopped. To save timeI used dehydrated chopped onions and canned low fat crescent rolls in place of recipe's dough. I made 4 large turnovers, using two crescents for each (one on top and one on bottom). We dipped them in marinara, quick & delish!

Pumpkin French Toast

Very good base recipe but needs a higher sauce to bread ratio to fully soak the bread. I make 3 servings of sauce per 4 slices of bread for my hubby & I. Used egg beaters and added a teaspoon of vanilla. Delish!

Instant Rolls

Quick, easy & delicious! I only got 7 rolls, but other than that, they were perfecto. I used fat free mayo, skim milk and used only 1.5 tbsp agave instead of sugar. We ate ours with the All Day Apple Butter from this site. Keeper recipe!

This sauce is amazing! I doubled the recipe, tossed half with pasta & asparagus then coated pan-fried, thin sliced chicken with the other half. Quick, easy & delicious.

Pumpkin Brownies

AMAZING!! I used only one cup of agave in place of sugar and cut the butter in half, adding extra pumpkin in place of it. Left out the nuts, just a personal preferance. Will definitely revisit SOON.

Quick and Super Easy Chicken and Dumplings

Very good & very easy, got raves from Hubby too. I used the Dumplings recipe from this site and added 1/3 c. onion puree, 3 small zucchinis, and about 10 baby carrots, diced. Topped it off with a little pepper, thyme, sage, poultry season and it was perfecto. Quick, healthy comfort food, yum!
