Boston Baked Beans

These beans were soo yummy! I made them exactly as written, no substitutions or changes. I love the canned maple beans so I might try substituting some maple syrup for some of the brown sugar another time.

Crustless Cranberry Pie

Sooo yummy! I love the tartness of cranberries and this "pie" (really cake) is the perfect balance. I used a 12 oz. pkg of fresh cranberries that I had frozen when I didn't use them, so it may have been more than 2 cups, I didn't measure them.

Five Minute Ice Cream

This simple ice cream recipe was fabulous! I wanted to get rid of my ever-growing collection of over-ripe bananas in my freezer, and this did well! I ended up using two frozen bananas in place of the strawberries, but I recommend weighing out your appropriate amount with a kitchen scale. The bananas don't need as much sugar as the strawberries since they are a sweeter fruit. I cut the sugar in half but I could have done with less -- it was Very rich. Delicious recipe!

Spicy African Yam Soup

This soup was fabulous. I didn't have zucchini or broth, so I added about 3/4 of chopped carrots and used water instead of broth. I doubled the cumin and added also 1/2 c. more salsa, 1/2 tsp chili flakes, 1/2 tsp salt, some ground black pepper, and a small amount of paprika for extra flavour. My boyfriend (not a big fan of vegetarian cooking) loved this soup. After sampling for the first time, I added 1.5 cups more rice to make the soup into more of a meal, but it was delicious both ways. I did not puree the soup, I liked that it had many textures.
