Terrific Turkey Chili

Very good chili that my whole family loved! I used ground turkey breast, (vs. ground turkey). What a great way to sneak some veggies into a dinner for a family picky eaters! I loved this so much that I sent it to my Mom so she could try it. Reheats well and is even better the second day!

Easy 'Charro' Beans

My whole family said this was the best beans & rice dish I had ever made, and one of them gobbled hers up so quickly she got a belly ache! As an added (healthful) bonus I used a great soy chorizo that I found at my local gourmet market and served the bean/meat mixture on a bed of brown rice. This is something I will make often. Oh, one last bonus- super easy and fairly quick to make.

Orzo and Rice

My family loved this side dish with another great recipe from the allrecipe directory, 'Souvlaki'. It is quick and easy to make last minute, as the ingredients are uncomplicated and are things we would normally have on hand at our home. The only change I made was to add a sprinkling of feta cheese over the top of the rice before serving. It gave the dish a little extra zing and helped tie it into the greek theme of the kabobs!

Souvlaki

We loved this recipe! And I figured out a few shortcuts to make it even easier to prepare! I marinated the pork (which I found at Trader Joe) overnight along with the peppers and onions. I soaked wooden skewers and built the kabobs the next morning. When I came home that night I preheated the oven to 400 and lay the skewers across a cookie sheet. They were done after about 25 minutes. The oven was an excellent alternative to the grill, which we only use seasonally. I served it with "Orzo and Rice", another quick and tasty recipe from allrecipies directory. The only addition to the rice dish was a sprinkling of feta on top! Yummmm!

Chicken Milano

Really great dinner for the whole family! I made mine with bow-tie pasta, but otherwise followed the recipe exactally. There are a few pans involved- but don't let that stand in your way. I chose this dish because it called for basic ingredients that I already had in my pantry and only took 45 minutes to prepare, (my kind of meal!) Everyone fought over the leftovers for tomorrows lunch!

Indian Carrots, Peas and Potatoes

This was a great accompinament to my favorite Indian Chicken Curry and basmati rice dinner. The spices were just right and did not overpower my main dish at all. This dish would also stand alone as a great Indian Vegetarian Entree!

Bourbon Pecan Chicken

Loved it! The blend of flavors was spot on, but it was difficult to coat the chicken with the breadcrumb/pecan mixture. Next time I would grind the pecans in the food processor before mixing them with the breadcrumbs. I might also dredge the chicken with an egg wash before coating it. Both of those steps would help create a chicken coating with the same great flavor but better sticking-power! The sauce was super easy but made a dramatic difference in the final product. I will make this for my family and dinner guests alike!

Asparagus and Cashews

A nice alternative to serving steamed asparagus, but I prefer less oil. I will plan on cutting the olive and sesame oils by half next time.

Beef Stew IV

This was everything I could hope for in an excellent beef stew! The flour and cooking process result in a great gravy that is smooth, thick and perfectly flavored. This is nothing fancy- just a real down-home stew that everyone loved! It will be my NEW standard beef stew recipe!

Absolutely Sinful Chocolate Chocolate Chip Cookies

I made these cookies with my six-year-old daughter on a snowy day! It was a fun and indulgent treat to make, but the cookies came out very 'cakey'. The sweet, rich taste was wonderful, but I prefer a cookie that's a little chewy and crunchy.

Chicken Biryani, Hyderabadi Style

If you have never cooked with yogurt you should know about 'tempering' before you make this dish. Sorry to say that I found out the hard way, and after 30 minutes of cooking ruined the entire dinner when the addition of yogurt caused the sauce to curdle! Determined to get dinner on the table, I did remake the entire recipe- this time using great care to add the liquid slowly to the yogurt. The end result was good and I will make it again.

Raspberry Cheesecake Stuffed French Toast

I used this recipe to help me re-create an amazing stuffed french toast I had at a brunch with friends. I used a disposable pastry bag to apply the raspberry/cheese mixture, which made things a lot easier. In place of the confectioner's sugar,I made an irresistable topping using 1/2 C Oats, 1/2 C brown sugar, 1 C chopped pecans and 3 TBSP honey. Spread evenly over the slices and baked at suggested temp and time. RAVE reviews!!

Filipino Lumpia

This was nothing like the lumpia my Philepino neighbors make, but it was still delicious. Meat mixture tasted good, but didn't hold itself together like a traditional filling does. My neighbor suggested adding soaked 'pan', (a bread which can be found at many Asian markets)to the meat after it has been cooked.
