Chocolate Cornstarch Pudding

Very good and easy pudding recipe. I followed the advice of some reviewers by using an extra tablespoon of cocoa and less cornstarch. I added a pinch of cinnamon to the cocoa, as I find it enriches the flavor, and at the end, when I added the butter and vanilla, I stirred in a few squares of bittersweet chocolate. Will make again.

Apple Squares

I have made these bars with apples, raspberries and gooseberries, and I wouldn't recommend substituting the apples. The apple version was great, the others tasted funny. I'd recommend replacing at least half the all-purpose flour with whole-wheat flour and reducing the white sugar. I also found that toasting the chopped nuts before adding them to the mixture makes the bars more flavorful. Good recipe, and easy to make.

Best Brownies

These brownies are fine. I would definitely recommend letting them sit for a day. I wouldn't call them the best brownies, but they're okay. The best part about them is the fact that they're so incredibly easy. Those of you who thought they were too cakey should consider leaving out the baking powder. If you prefer them to be chewy, you could try substituting an egg for two egg whites.

Nutella® Cheesecake

This recipe was just what I was looking for: a sugary, rich, creamy dessert for my chocolate-loving friend's birthday. I used half the sugar suggested and used icing sugar instead of white. I made the crust by crushing digestives and adding a tsp of Dutch cocoa and a tablespoon of melted butter, mixing it up and pressing it down in the baking pan, then putting it in the freezer for about 30 minutes. I then added the creamy filling in several layers which I separated with layers of chopped Ferrero Rocher candies. Topped the cake with toasted hazelnuts and three Ferrero Rochers and voilà! I didn't actually try the cake myself, because just thinking about those calories made me feel a bit weak ;) but the reviews I got were fabulous .

MMMMM... Brownies

Have any of you watched Gilmore Girls? So there's this one scene in Season 2 when Luke brings Lorelai a batch of brownies that he messed up by adding three times the amount of chocolate. That's kind of what I feel like I just baked. These brownies are literally chocolate bombs - super rich and super dense. Don't get me wrong, I enjoyed them, but one small one made me feel like I was about to explode.

Best Chocolate Chip Cookies

This is my favorite chocolate chip cookie recipe. I made a huge batch of these cookies for our university Halloween party and everybody raved about them! I made so much dough that I had to mix in all in a small barrel. Attention: YOU MUST chill the dough before baking, or the cookies will spread and become thin and hard! Also make sure you use good quality chocolate chips - it makes such a difference. Personally, I like to leave out the white sugar because I don't like very sweet things, but each to his/her own. You can also try using half all-purpose half whole-wheat flour, I did it on one of the batches and it was quite a success. These cookies last for a few days in the fridge, and they freeze well.
