Indian Chicken Curry II

To me it doesn't matter if this is authentic or not, it's delicious. My dad's side of the family is from India, and some like Indian food, some don't, but I have made this exact recipe for a lot of my family and have never had a complaint! It's delicious. I have been making this for several years, the only change I make is adding a bit more curry powder and a little bit of garam masala. One tip I have, get cup of yogurt out and let it sit at room temp, then take the pot off the stove and let your onion & spice mixture cool down, then gradually heat it back up while adding your yogurt. This keeps the yogurt from curdling, not a guarantee though!

Baked Chicken Nuggets

Easy and delicious! I only did 2 things different, used egg instead of butter and I didn't have italian bread crumbs so I used plain and added some italian seasoning to it. These came out wonderful, my 13 year old raved about them and asked when I could make them again!

Classic Meatloaf

Loved this!! I cut the servings in half to do this as I was only cooking for 4 people. I didn't do the glaze and the only other thing I changed was that I didn't have mushrooms or bellpeppers. I did all the other ingredients exactly as the recipe said. Tasted delicious and was a hit with the others that ate it! It was a bit more moist than I would like it to be, not sure why that was. Bumped the cooking temperature to 350 and ended up cooking it for about 50 minutes.

My dad's side of the family is from India, so I have tried many different curries throughout my life. This was absolutely wonderful. I followed the recipe as it was written, with the exception of adding potatoes, hard boiled eggs (something we frequently use in curries in my family) and slight amount more yogurt (since I was adding a couple extra bulky ingredients). I noticed that some reviewers commented that this wasn't as authentic as they'd hoped, but who's to say what's authentic anymore?? Curries vary from any area you're in in India, and in the world!!
