Oregon Salmon Patties

The flavor was really good, but I wished I had read the reviews first and not added the reserved liquid, as others had suggested. They didn't have quite the right consistency, and they were falling apart. I think if I had followed this advice, I would've given this recipe 5 stars.

Vegetarian Korma

I have tried several curry recipes, and this was the best one so far. I only made a few changes. I used 2 tbsp. curry powder, 1 potato (finely chopped), added a can of chickpeas and used coconut milk instead of heavy cream. I will Be making this one again!

Banh Mi

This was the best sandwich I've ever made. I did cook the chicken a little differently. I rubbed it with some coconut oil, cayenne pepper and cumin and pan seared it in coconut oil. Then I put it in the oven on 450 for about 15mins. The only other modification I did was using watermelon radish instead of daikon (couldn't find it). Me and my boyfriend both had seconds. I will definitely be making this again!

Quinoa Vegetable Salad

This was pretty good as a side. I used chicken broth instead of water for the quinoa and used grated carrot instead of diced. I went a little heavier on the veggies and also added sliced black olives, but I still wished I had more veggies. Might try reducing the amount of quinoa next time. Overall, a nice light dish. Probably best during the summer months.

Southern Dill Potato Salad

This is probably the best potato salad I've had. I did make a few modifications since I don't like celery. I used 2 dill pickle spears instead of celery, and I used 1/4 cup fresh dill instead of dried dill because I love fresh dill. I will definitely be making this again!

Spicy Indian Chicken and Mango Curry

I'm giving this recipe 3 stars including the modifications I used. I could only find red curry paste, so I used that but had to more than double the amount. On top of that, I added cayenne, cumin and ground ginger. Without the extra spice, it would have been much more sweet than spicy.

Victor's Shrimp Fried Quinoa

This was great! I made some minor changes. I used egg instead of shrimp and coconut oil instead of canola. I also added a little garlic. I will be making this one again for sure

Simple Tuna Melt

I've used this recipe several times, but I liked it best when I made it with kalamata olive sourdough bread from the bakery and freshly grated mozzarella cheese. I always use Natural Sea brand tuna. It's less watery and more tasty than other brands and can be found in most health food stores.
