Applesauce Cake IV

Awesome! I only tweaked the amount of spices (I always add more cinnamon!). It's fabulous with cream cheese frosting. I made 12 cupcakes; they were baked perfectly in 30 minutes. Excellent - I'll definitely be making these again!

Oatmeal Peanut Butter Cookies III

These were phemonemal! I got 22 good-sized cookies out of the recipe. I used grind-your-own-peanuts peanut butter, so it did not add any wxtra sugar or salt to the cookie; I added about an extra teaspoon of sugar to the cookie dough but didn't change the filling at all. I think it was perfect! Any sweeter and it would have been too much - it tasted just like a nutter butter! The not-so-smooth fresh ground peanuts didn't have any negative effects on the texture of the cookies at all. I will absolutely be making these again!

Breaded Chicken Fingers

Wow, this was great! I used two chicken breast halves, and there was enough marinade and breadcrumb mixture to double-coat. The magic frying time for us was 8 minutes at 375. I added lots of spices - double the garlic! Those two breasts ended up making enough for about five people - too bad there's only two of us. I think next time I make it, I'll add even more spices; probably about a teaspoon of black pepper and about a half teaspoon of cayenne. Great recipe, and super easy!

Shrimp Tempura

Wonderful! The rice wine marinade really gave it an authentic flavor. I'll have to try this batter on veggies too; it was wonderfully light and crisp. A keeper for sure!

Strawberry Syrup

I added more strawberries than the recipe called for (it's whatever came out of the yard!), and this was a huge hit at the pancake day at my office! With the extra berries, it wasn't too sweet at all - just right. We used what little remained for waffles and ice cream; it was a great addition to each!

Split Pea Soup

This was my first time making pea soup! I rated it four out of five stars because I did have to make a lot of changes to get it to our liking. Hubby and I like lots of spice, though, and we kept having to add more: about another tsp of pepper, plus cumin, coriander, bay leaf powder, smoked paprika, onion & garlic powder, and a bouillon cube. The ham bone I got was smoked, and I think that overpowered it a little - next time I'll try to find a plain ol' bone; I'd bet next time this will totally be five stars! Thanks for a great recipe!

Slow Cooker Pulled Pork

In a word - perfect! The root beer really imparted a nice sweet flavor, and was better (for my tastes) than using vinegar as the acid. The meat was so tender we had a hard time even removing it from the crock pot! I used homemade BBQ sauce, and this was the best pulled pork I've ever tasted. Thanks for the great, easy recipe!

Sour Cream Pumpkin Bundt Cake

This was a huge hit for Thanksgiving! It really wasn't as heavy as I expected, which was great. It did, however, take almost two hours to bake - next time I'm going to experiment with the temperature a bit. The batter seemed a bit overwhelming for my 10-cup bundt pan; perhaps making the bundt and a smaller loaf with the remainder would help the baking time. It didn't burn, though, despite the extra hour in the oven - wonderfully moist!

Pie Crust IV

This was, by far, the best pie crust I've tried. Even with my dutch apple pie overflowing, the crust didn't buckle, become soggy, or get chewy. I used a vegan shortening and it worked wonderfully. This will absolutely be my new standard crust.

Best Chocolate Chip Cookies

I'm getting used to the oven in my new apartment, and i don't think it got as hot as it said - the cookies carmelized before they baked all the way! so, they turned out more like a cross between chocolate chip and lace cookies. but they still taste darn good. I'm going to try this recipe again, hopefully with a bit better luck!

Crispy Gingersnaps

These cookies are phenomenal. I added just a touch more ginger (I like it strong!) but otherwise didn't change a thing. These are by far the best gingersnaps I have made - this recipe is a keeper!
