My job requires me to cook for the individuals I provide services for. This past Sunday, the bright idea popped into my head that I'd make my mom's Cowboy Coffee Cake for them. I gave my mom a call since I didn't have the recipe handy and to be honest, I had never made it before in my… MORE

About this Cook
Mmmmmm. I love hearing people say that when they take a bite of something I prepared. Inside I'm doing a little dance and pumping my fists shouting "yes!".
My favorite things to cook
Cookies, cakes, corn casserole, bbq meatloaf, sloppy joes (homemade of course), honey baked chicken (awesome on the grill)
My favorite family cooking traditions
Making candies, fudge, and cookies at Christmas. Making pies, pumpkin rolls, and themed cut-out cookies in the fall.

Double Layer Pumpkin Cheesecake
I just made this recipe last night and serious...DELICIOUS!! I didn't put a layer of whipped topping on once it was finished becuase I personally like lots and lots of it so I set the container aside for people to add as much as they wanted. Also, instead of the three different spices, I used 1/4 teaspoon of pumpkin pie spice and 1/4 teaspoon of ground cinnamon. Plus I baked it in a spring-form pan. It turned out perfect and tasted just the same! Thanks for the recipe! :)

Easy Granola Bars
Everyone from my fiance to my nephew and niece love these granola bars. I used just peanut butter chips and dark chocolate chips for one batch and they recieved rave reviews! Thanks for the recipe!

Pumpkin Pancakes
These pancakes were delicious! Very light and super fluffy from adding the whipped egg whites. I think next time instead of just using cinnamon, I will use pumpkin pie spice to give it more of a seasonal flavor. I didn't make the syrup but instead used a cinnamon maple syrup from the grocery. Very, very delicious. Thanks for the recipe!
