Creamed Chipped Beef On Toast

This is a great fast, cheap and EASY meal. I have found the chipped beef you buy in the refrigerated section is less salty, easier to use. Its cheaper too and 2.5 oz. is plenty.

Easy Fried Eggplant

I sort of turned this recipe into Eggplant parmesan. Instead of using 2 cups bread crumbs I used 1 cup parmesan cheese and 1 cup italian seasoned bread crumbs, or just add italian spices (basil, oregeno, parsley) as well as about 1 tsp salt and pepper each. I served with a little spagetti sauce on top w/ parm cheese. YUM!!

Pork Chops to Live For

We loved this recipe. We did what others suggest and skipped the egg/flour thing as well as added some spices and seasonings like onion/garlic powder. I had the perfect amount of gravy when following the recipe exactly.

Easy Pork and Sauerkraut

This was my first experience with sauerkraut. My hub requested it because his mom always used to make it. It is strong flavored but I really like it. Follow the guidelines and have it with mashed potatoes and applesauce to kind of ease the strong flavor. I follow the recipe exactly except skip the beer and it is really very delicious. My hub says it is better than his moms :)

Beef Stroganoff III

Once I figured out the right kind of meat to buy (I am kind of a novice as far as knowing my meats), I found this recipe to be FABULOUS!!! I also misread it my first time and used 4 TB butter instead of 4 oz. You definitely need 4 oz. It is so good. We have it quite often. Don't change anything. Don't 1/2 it even if you think you need to because the leftovers are just as good!

B.L.A.T. Wraps

I make these a lot now- they are very tasty. The only thing I do different is use a pita instead of a tortilla. I microwave it for 20 seconds to get it nice and warm then add everything else. I also like to add cheddar cheese. YUM!

This is sooooo yummy. THe only thing I do different is leave out the carrots (personal preference). It makes a LOT. You might make it in the next bigger sized pan because 9x13 is usually overflowing. GREAT recipe.

Chicken Enchiladas II

I make these a lot and I don't know how they come up with 6 12 inch tortillas. I'm lucky if I can fill 5 smaller tortillas. BUT they taste wonderful and my family LOVES them! I don't change a thing (besides the tortialla size).

Easy Ham and Cheese Appetizer Sandwiches

These are fabulous! What makes these is the spread. You need to GRATE the onion just like it says, with the smallest side of the grater so the onion is basically liquified. I used frozen rhodes rolls and just baked them about 10 minutes, let them cool, then added the spread, meat and cheese and they turned out soooo good! I have since made them with turkey and cheddar and they were excellent. The only things I changed with the spread are a little less poppy seeds and regular mustard (all I had). Excellent recipe!!

Asiago Toasted Cheese Puffs

These did not turn out at all how I had hoped. It may be the fault of my baguette was so hard I couldn't even slice it without the bread breaking all over. I don't know if that is how all baguettes are, but it didn't work for this recipe! For the couple of slices that didn't break I didn't find the flavor to be all that good. Maybe I'll try it again with different bread.

Giant Won Tons

These are really good. For me, one 16 oz. package of small won ton wrappers were plenty. I found as I went along I could actually get quite a bit of meat mixture into the tiny little won ton. I added just 1 stalk of celery. I also added a lot more Worcestershire sauce (maybe 2-3 TB) and some onion and garlic powder for more flavor. They turned out fabulous. I froze them and then baked them just like in the directions for a party and they were a hit. Sweet and sour sauce was the most popular sauce by far. Good recipe!!

Mouth-Watering Stuffed Mushrooms

These are to die for. I make them quite often. I always buy to packages of mushrooms. It makes A LOT more than 12 mushrooms. The filling is so good, sometimes I eat the left over on a cracker like wheat thins. Yum. I follow the recipe exactly except for maybe a little bit more parmesan cheese and not so much cayenne pepper, just because I don't like it too spicy. Great recipe!

These are delicious!! Sometimes I skip the mushrooms or chives if I don't have them on hand and they still turn out yummy but they are really good to add. Follow the recipe exactly. Excellent!
