Coconut Shrimp I
EXCELLENT recipe!! Made these for Christmas Eve(about 72 shrimp, they lasted less than 10 minutes!!) Didn't have any beer so I used coke. They came out perfectly, very crispy and the batter stayed on while frying. Just don't forget the 1st step, dipping them in flour first or the batter won't stick. For a dipping sauce, I went with the orange marmalade, added mustard, honey, brown sugar and some "Nellie & Joes Famous Key West Lime Juice", I am sure any lime juice will do. mmmm.....very good.

Chocolate Chocolate Chip Cookies I
These were delicious!! It was like chocolate decadence!! I did use white and brown sugar instead of all white like others suggested. I also use 1 cup of cocoa, sweetens them up just a little more. I baked for only 8 minutes and let them stay on the cookie sheet for 2 minutes before removing them to cooling rack. They came out perfectly, not burned on the bottom and very moist. Kept them in a sealed plastic tub and were still fresh 5 days later!! My son pops them in them in the micro for about 10 seconds to get them warm again and eats them with a cold glass of milk!! Delicious!!!

Chocolate Thumbprints II
These cookies are delicious. I skipped the egg whites and added an extra tbsp of sugar to batter to make a little sweeter. Try popping them in the micro for about 20 secs the next day, they taste like they just came out of the oven!!! Don't forget the milk!
